    Deen says she's ready to lighten up her cooking

    MIAMI BEACH, Fla. (AP) — A month after being widely criticized for revealing she has diabetes — as well as a lucrative endorsement deal for a drug to treat it — Paula Deen says she's ready to show a lighter side to her famously fatty Southern-style cooking.

    Just don't expect her to swear off butter.

    "I am who I am. But what I will be doing is offering up lighter versions of my recipes," the longtime Food Network star told The Associated Press during an interview at the South Beach Wine and Food Festival on Friday.

    "I will have a broader platform now, trying to do something for everybody," she said. "But you know, I'm Southern by roots. I was taught (to cook) by my grandmother and nothing I can do would change that."

    Food Network general manager and senior vice president Bob Tuschman says the network is open to working with Deen to shape her show's future. "The discussions for what that could look like are just getting underway," he said.

    The Food Network did not immediately respond to questions regarding Deen's new approach or whether they were involved in the decision.

    Last month, Deen drew the ire of many in the health and culinary worlds when she announced that nearly three years before she had been diagnosed with Type 2 diabetes. Roughly 23 million Americans are believed to have Type 2 diabetes, a condition blamed in part on obesity and unhealthy lifestyles.

    During those years, she continued to promote her butter- and bacon-laden cooking on television and in books and magazines, and to profit from lucrative endorsement deals with companies such as Smithfield ham and Philadelphia Cream Cheese.

    But the harshest criticism was triggered by her simultaneous announcement that she also would be a paid pitch person for drug maker Novo Nordisk's new online program, Diabetes in a New Light, and for its pricy drug, Victoza, which she takes.

    Many wondered why she appeared to wait until she had a paying endorsement before revealing her diagnosis.

    "Yes, I am being compensated," she said Friday. "It's the way of the world. It's the American way. But I am taking a portion of that compensation and giving it back to the (American) Diabetes Association."

    Deen would not say how much she is being paid or what portion would be donated.

    And she dismissed the idea that she should have announced her diagnosis sooner, citing her longstanding battle with agoraphobia.

    "It took me 20 years to come out and stand up and say, 'Hey, my name's Paula and I'm agoraphobic,'" she said. "I was so ashamed, so embarrassed. So to do it in two-and-a-half years, I thought it was pretty good."

    Deen, who is 65, shrugged off the criticism — including by some fellow celebrity chefs — saying her fans have stood by her.

    "I think a few people who have access to a TV camera and ink kind of wanted to hate on me for coming down with something," she said. "But I so don't worry about it."

    Deen lives in Savannah, Ga., where she ran a successful catering business, wrote a best-selling cookbook and opened an acclaimed restaurant, The Lady & Sons, before launching "Paula's Home Cooking" on the Food Network in 1999. She won a Daytime Emmy as Outstanding Lifestyle Host in 2007, and has branched out to cookware, foods and furniture bearing her name.

    Her recipes include deep-fried cheesecake covered in chocolate and powdered sugar, a quiche that calls for a pound of bacon, and a French toast casserole made with two cups of half-and-half and a half-pound of butter.

    But Deen notes that food is only one piece of the diabetes puzzle — along with genetics, lifestyle, age and race — and emphasizes that she doesn't eat like that every day.

    Following her announcement last month, Deen said she had stopped drinking the sweet tea she used to sip all day and had taken up treadmill walking. On Friday, she told NBC's "Today" show that she has been eating less and exercising more.

    Deen also has been promoting her son's take on healthy eating, Food Network's "Not My Mama's Meals," which stars Bobby Dean making lighter versions of his mother's recipes.

    Though Deen said she last month wasn't planning to change her approach to on-air cooking, on Friday she said that when she begins shooting new episodes of her show this spring, the recipes will offer something for everyone, including people who want healthier recipes.

    But it may be a while before viewers see the difference. Because filming and production schedules are set well in advance, it could take up to two years before those episodes are aired.

        I'm not angry because I feel like she forced me to eat her cooking (which I never have by the way) I'm angry because she is so #$%$ fake!! She played up the "good ol' Southern girl" routine until her pockets were lined and then be #$%$ed all the fans(my Grandparents are huge fans) she let down. Yes its tv and she's a "celebrity" but put a little of the REAL you in there please! Agoraphobia???? I doubt it. I've been hearing tidbits about her for years and some of the things she's done and she is ALLLLL about the money!! When you play dirty it eventually catches up to you.

        I agree Karen.. The type of foods she cooked were okay for only every once in a while or maybe a family gathering. But if you wanted to eat the S*** everyday and blow up as big as a house, then look in the mirror and you will see who to blame.. Geeze

      Who cares that "during those years, she continued to promote her butter- and bacon-laden cooking on television and in books and magazines"? That's totally irrelevant to Deen's diagnosis. Type 2 diabetes is about insulin-resistance due to sugar in the diet, not the fat you eat. These journalists who keep repeating the above fact about butter and bacon are just as wrong to spread wrongful implications about diet.

      Deen's "crime", if you will, is to promote a diabetes drug from Big Pharma when her own lifestyle choices are the only "drug" she needs to cure herself.

      Well, she wasn't being criticized for "revealing" her diabetes. But she was criticized for what she did about it. Funny thing is, so are an awful lot of diabetics. But the food police usually don't know squat about diabetes, and certainly not about the specifics of an individual's situation. People with diabetes can eat anything. It's about portion control and finding out how a particular food affects your blood sugar. And those things are things it takes time to learn. Since her show isn't Paula's Diabetes Cooking, I think we should cut her a break and wait to see what she's going to be doing.

      I love to cook and I was taught well. I use some of her recipes but I make changes in them to make them healthier without decreasing the flavor or texture.I'm glad she has recognized the neccessity to make changes and I wish her well.

      I love watching Paula Deen, love her accent and the dishes she makes look so yummy even if they re unhealthy. My husband has CHF and is diabetic and all her dishes would have to be adapted to fit our health issues. Given her talent and personality, she will reach a lot of people in a good way by promoting healthy dishes.

        Butter is healthier than margarine and sugar is better than toxic artificial sweeteners. The key is to eat organic and small portions.

      I feel bad for her, honestly, if you didn't think her cooking was unhealthy then you are of the same mindset of blaming McDonald's because you are fat. She jokes in practically every show about all the butter she uses. I don't recall her ever saying her food was meant to be eaten everyday, she truly has only hurt her own health and she has admitted to that. Back off this woman!

        get real worn. This is why so many Americans, especially Southerners are fat pigs, and the show just reinforces really bad choices. It's about makin money, but, no doubt the food does have mass appeal, and the masses wind up as masses (of fat, that is). In the end, free country baby, eat what you want!

      half my family is from the south and sure, we did fried food, but it wasn't just deep lard and butter frying. the food is as rich as you make it. it's not hard to fix PD's recipes to still be good and not instantly kill you if you have half a brain about you. her stuff looks delicious, but i'd never make any of it the way she does/did. it would be easier to just eat Crisco with a spoon out of the container like ice cream... healthier, too.

      i guess you'd call this move her Hail Maryjo Pass.

      And I'm sure her agent and network were right behind her with coming up with creative new show, book, and interview possibilities presenting the new "lite"-perspective Paula Deen, so that she practices healthier walking all the way to the bank. :) But I like Paula, she obviously loves her family and her cooking talent, and both deserve that she take good care of herself and make a win-win situation out of her health condition--I wish her good health and continued good fortune!

      Check out the the ones that promote wine. They can't even cook on the food network without adding wine to the recipes. I add butter,cream cheese,bacon to my diet etc. I omit the white stuff like flour, and sweets that make sugar when digested. That is the most dangerous to a persons diet. Use your comon sense and quit blaming everyone else for your stupidity.

      She was the queen of unhealthy food. I knew that her recipes were not the best for you. I doubt anyone, well except Paul herself, cooks like that everyday.
