    Salt diet dangers may be influenced by potassium

    ATLANTA (AP) — The debate about the dangers of eating too much salt has gained a new wrinkle: A federal study suggests that the people most at risk are those who also get too little potassium.

    Potassium-rich foods, including fruits and vegetables, have long been recommended as a dietary defense against heart disease and other chronic illnesses. The new research is one of the first and largest U.S. studies to look at the relationship of salt, potassium and heart disease deaths.

    "If you have too much sodium and too little potassium, it's worse than either one on its own," said Dr. Thomas Farley, New York City's health commissioner, who has led efforts to get the public to eat less salt. He co-wrote a commentary published with the study in Monday's Archives of Internal Medicine.

    Potassium may neutralize the heart-damaging effects of salt, said Dr. Elena Kuklina, one of the study's authors at the Centers for Disease Control and Prevention. Sodium increases the risk of high blood pressure, a major cause of heart disease and stroke. Salt — or sodium chloride — is the main source of sodium for most people.

    The research found people who eat a lot of salt and very little potassium were more than twice as likely to die from a heart attack as those who ate about equal amounts of both nutrients. Such a dietary imbalance posed a greater risk than simply eating too much salt, according to the study.

    Exactly how potassium and salt interact is not understood, and no one believes that simply taking a potassium pill will protect someone against the dangers of a high-salt diet.

    Instead, the take-home message is what health officials have been saying for years: Eat a lot of fresh fruits, vegetables and other potassium-rich foods, and eat less salty, processed foods.

    Health officials say no one should eat more than 2,300 milligrams of sodium a day, equal to about a teaspoon of salt. Certain people, such as those with high blood pressure, should eat even less. But it's not just a matter of putting down the salt shaker. More than three-quarters of the sodium in the U.S. diet is in processed foods, and only one in 10 Americans meet the teaspoon guideline.

    Americans aren't much better at getting enough potassium. The recommended amount is 4,700 milligrams a day. The average woman gets only about half that; the average man gets slightly more.

    Spinach, bananas, broccoli and prunes are among the foods known as good potassium sources.

    In the new study, researchers surveyed more than 12,000 U.S. adults ages 20 and older, asking them what they ate the previous day, and calculating their daily consumption of sodium and potassium. The participants were followed for 14 years, and 433 died from heart attacks.

    In addition to the increased risk of high sodium and low potassium, the study also found ill effects from high sodium alone. People who consumed 5 grams a day had nearly twice the risk of dying from a heart attack as people who ate 2 grams a day during the follow-up period.

    Some experts found the results interesting, but also noted several limitations of the study.

    Results are based on what people said they ate on just one day of their life. That day may not have been typical and it may not be representative of their diet in the years since, noted Dr. Robert Eckel, a University of Colorado heart expert.

    Also, it's an observational study that shows an apparent link, not the kind of rigorous scientific study used to prove cause and effect, he added.

    Health officials have increasingly pushed the public to reduce their salt intake, but the CDC study comes in the midst of some scientific back and forth over how dangerous dietary salt is. In a review published last week of seven, smaller studies, other researchers found no strong evidence that people with high or normal blood pressure reduce their risk of death by reducing sodium consumption. That review, by the Cochrane Collaboration, had limitations because of its size.

    Still, it prompted the Salt Institute — an industry group — to call government policy on reducing salt consumption ill-advised.

    "In light of this, and other recent research, it is time for the government to cease its costly and wasteful efforts to reduce salt consumption until it can conclusively prove a tangible benefit for all consumers. This can only be done through a large-scale clinical trial on the impact of dietary salt reduction on health outcomes," said Lori Roman, the Salt Institute's president, said in a statement.

    Alice Lichtenstein, a Tufts University nutrition scientist, said the attention on salt has created a lot of backlash. The CDC study "is a confirmation that dietary salt does matter, and all these public health efforts and the dietary guidelines are appropriate," she said.

      In every state you go, Malls, Costcos, Movie Theaters, Fast Food chains, Casinos, Pizza Hut, Dominos, Subways, we see the same crappy food that these chains provide.
      Large quantities poor qualities. There is no way on this beautiful earth that you are not going to see more and more and more obese young or old, the more they eat this kind of food the more their brains are stopping from functioning right, and they dont want to exercise..
      These people who live day after day eating poor qualities of food their brain cells are damaged they dont think of exercising they think only of eating, because this crappy food is like drugs for them except it is food that has chemicals not nutrients....
      What do they eat in all of these locations? Pizzas, Hot Dogs, Hamburgers, Sausages, greasy Pastas, fried chicken, fried onions, milkshakes full of sugar, Mc Donalds Big Macs, is this what we were born to eat? Where in the hell have you seen a country that sells the same crappy food in every state and every corner except here in this great country that invents miracles, but they cannot invent fast food chain that contains healthy fresh food like veggies lean meat and fruits, that our bodies require every day to function properly, they dont because it costs lots of money...
      Its too late America, more Obese is on the rise, these Obese will not give a dam about their bodies or exercise they want to eat crappy fast food cause they dont have energy to eat healthy and exercise...
      Live with it America, look at the obese on the rise and enjoy watching bodies that look like huge ugly monsters.......
      But who is happy? The owners of these fast food restaurants who are making tons of money and this is what matters for them... Show them the money they will screw all these human beings who are fed worst than animals ............................

        Advocate... yes it is! It's called a balanced diet and it's easy to achieve. Just visit the produce section of your local market in lieu of the chip and snack section and pay attention to what you eat. Chips and snacks are nice sometimes but fruits and veges can also be substituted for a bag of chips, a soft drink, a trip through the Mc-d's drive through or a twinkie snack from a convenience store.

        You actually might notice you'll feel better. Works for me!

        At 4,700 mg, it seems pretty hard - we eat out maybe 5-6 times a year, my 'snack' is usually apples (or bannans) with peanutbutter, and ocassionally twizzlers. I just love the Twizzlers........ But short of soy you may just have to eat more fruits & veggies than you could stuff into yourself in a day.

      What no mention of magnesium or calcium?! Duh, the whole point is that you have to balance all your salts not just sodium and potassium. There has been much more research about this then they even mention, and yes a study that only asks people what they ate yesterday doesn't tell you anything at all. Sea salt contains a variety of salts that is much healthier. I think that fact that we refer to only NaCl as "salt" when we need to be including the other salts is a major part of the problem here. Obviously if you consume only NaCl and not the others you will have problems. However, it has been know since the 90s that it isn't the actual amount of NaCl consumed that is source of the problem, it's the fact that people don't get enough of the the other positively charged ions (K, Mg, Ca) that they need to keep it all in balance. Excess salts will just be eliminated in urine, it is the inbalance in the body that is the problem.

      I've been using Morton "Salt Lite" (1/2 sodium 1/2 potassium) for many years. I didn't even start for the health benefits of potassium - it just TASTES SALTIER. Pure sodium salt has a sort of a sour taste, and there was one time when I had a great craving for salt and it did nothing to satisfy it - it was then that I found potassium salt was what I desired.

      While this data is nothing new, it's a message the public needs to get. Cooks can change the salt they use, make tastier products, and healthier products also!

      As a Dietitian working with Renal Dialysis Patients, we counsel patients to always lower their salt intake. Many people on dialysis have gotten there due to high blood pressure and Daibetes. The two together are very bad for the blood vessels and arteries of people, especially taking blood thinners and anticoagulants like heparin. Lowering salt intake in the United States food supply will be difficult. My book, Foods to Eat for Essential Nutrients has information on essential nutrients including potassium, magnesium, calcium, phosphorus and other nutrients that can aid in keeping blood pressure down and keeping the blood vessels healthy. It is a matter of education and the information about essential nutrients can help improve overall body health at all ages. Older people need to be limiting salt , especially if they have a family history of heart disease. Younger people ca also develope high blood pressure. There is no RDA (Recommended Dietary Allowance ) for potassium. The upper limit is recommended at 4700 mg a day , especially if a high salt intake is eaten. It is better to increase potassium as described in the book, and reduce salt, especially uniodized salt on a daily basis, in order to keep Blood pressure down. Save your Kidneys.
