Rinse chicken in cold water and pat dry. In a bowl, mix together the dry rub ingredients. Cover chicken with dry rub completely. Place in a large oven-safe dish and refrigerate for approximately 30 minutes. Preheat oven to 375ºF. Place chicken in the oven and cook for approximately 40 minutes, or until the skin has browned and the internal temperature reads 160ºF. While the chicken is cooking, set a medium-size sauce pot over medium heat and whisk together butter, hot sauce, vinegar, Worcestershire sauce, cayenne, paprika, garlic powder, and red chili flakes. Remove chicken from the oven and coat with butter sauce. Return the chicken to the oven for an additional 30 minutes, basting with the sauce every 10 minutes, until the chicken temperature reaches 165ºF. Strain and set aside. In a large sauce pot set over medium heat, sauté olive oil with crushed garlic for a minute, until fragrant. Add tomato sauce and crushed tomatoes. Bring mixture to a boil and add basil, salt, red pepper, and dried oregano. Stir everything together and reduce the heat to bring the sauce to a simmer. Let cook until slightly thickened and remove from heat. Mix approximately 1 to 1 1/2 cups of sauce with pasta, until coated. In a large bowl mix together ground beef, onion, parsley, garlic, eggs, seltzer water, salt, breadcrumbs, pecorino romano cheese, and Worcestershire sauce until incorporated. Remove about 1/3 of the meat and set aside. Put aluminum foil into the bottom of an oven-safe bowl and form 2/3 of the meat into a hollow meat bowl. Make sure to keep the sides thick enough to hold the pasta. Fill with pasta and then use the remaining meat to cover the open top of the meatball and carefully use the bowl to help mold the meat into a large ball. Use the extra foil to cover the top of the meatball, leaving an opening for a vent. Preheat the oven to 350°F. Bake the meatball for about an hour to an hour and 15 minutes, or until a meat thermometer reaches 160°F. Carefully remove the bowl from the oven and drain any excess liquid. Invert the meatball onto a large platter and cover with remaining sauce and parmesan cheese. Serve warm. Unlike many tortilla soups that fall flat, Fearing's version layers flavor after flavor so that they sing in perfect harmony. Sauté until the tortillas just start to crisp up and the garlic starts to brown slightly, about 4 to 5 minutes. Add ancho chilies, jalapeño, cumin, coriander, cilantro, and bay leaf; cook for a few minutes. Add onion puree, tomato puree, chicken stock, and cracked black pepper. Bring mixture to a boil and then bring the soup to a simmer and let simmer for 40 to 45 minutes. Skim fat from the surface of the soup as necessary. Garnish each soup bowl with smoked chicken, green cabbage, fried tortilla strips, jalapeño pepper, red radish, avocado, and white cheddar. After soup has simmered, finish flavoring soup with cayenne pepper, lemon juice, and salt. Process mixture in a food mill or blender until smooth. In a separate large bowl, pour 6 tablespoons of the marinade over the chicken and marinate for at least 30 minutes. Reserve remaining marinade for later. Drain chicken, dry carefully, and discard the marinade in the bowl. To make the chicken: Heat sesame oil in a medium saucepan over medium heat. Add garlic, ginger, chili paste, and cook, stirring frequently, until fragrant, about 1 to 2 minutes. Add 2 cups of the marinade and continue cooking for about 3 to 4 minutes, or until the sauce has slightly thickened. In a large bowl, combine cornstarch, flour, baking soda, and remaining marinade until it resembles a coarse meal. Dip chicken first into the egg whites, and then dredge in the cornstarch-flour mixture, pressing to coat. Heat oil in a large heavy-bottomed stock pot until it reaches approximately 350ºF or a pinch of flour thrown in starts to simmer and fry. Add chicken and fry until golden brown, approximately 2 to 3 minutes. Drain on paper towels. Toss chicken in warmed sauce and serve immediately garnished with sesame seeds, green onions, red ginger, and cilantro sprigs.
