If you think bacon is amazing, wait until you try pork belly. Executive chef David Diaz teaches Roger Hailes how to cook the perfect pork belly. Start by removing the rib, and then cutting the meat in half. Make a sachet from a selection of fragrant spices, and tie it up in cheesecloth. Coat your pork belly in salt, add the sachet, and bring to a simmer before baking at 300 degrees for 3 hours. Refrigerate for 24 hours before slicing into bite sized chunks, and you’re ready to cook.
