I made my own dough for this recipe but store bought is fine too if you’re pressed for time. All you have to do is get creative and top it with your favourite toppings! I used caramelized onions, juicy plum tomatoes, fresh baby spinach, pesto and lots of mozzarella cheese.

I can incorporate noodles into almost everything and be happy. I have made pad thai for years and have really not been impressed with the recipes that I’ve tried. I decided that the best pad thai is the one that you don’t add 100 ingredients to. Make it a big batch for dinner and pack it for lunch the next day. If you save a bit of the sauce you can drizzle it on and eat it warm or cold. Delish!

First of all. How do you pronounce Freekeh what is it?

Freekeh (pronounced “free-kah”) is a cereal made from wheat. It looks like bulgar wheat and has a greenish tinge to it. I have made tons of different grains lately and this one has a distinct smokey flavour that is unique and delicious. I love the addition of dried cherries and pistachios in this recipe as a side dish or a perfect salad for lunch.

I call this the “what’s in my pantry” lunch. Spinach noodles are tossed in a simple vinaigrette and topped with dried veggie chips, fresh snap peas and crushed peanuts. For protein, you could add slices of grilled chicken breast. Top it all off with creamy avocado and Sriracha mayo for a pop of colour and heat.
