A new Mexican restaurant, Albertanos, is planning to open in Aberdeen this fall.

Business partners Maria Santana and Sergio Aguilar were in town Wednesday with Jose Diaz, the man who will be managing the restaurant. The three were busy setting up contractors to make improvements to their building at 3311 Sixth Ave. S.E. That's the former Pizza Hut location near Uptown Aberdeen.

Santana said they're hoping it will take two months at most two to get the space ready.

The Aberdeen site will be the fourth Albertanos restaurant for Santana and Aguilar, who have eateries in Bozeman, Mont.; Buffalo, Wyo.; and Gillette, Wyo. Those restaurants are connected to either a gas station or hotel, she said, so Aberdeen's will be the first stand-alone restaurant.

Santana and Aguilar met while working together at a restaurant in Idaho. Aguilar had interest in opening a restaurant of his own and, together, they were able to make that happen. Their first Albertanos was in Buffalo.

"We try to find cities to expand to to where they don't have the kind of restaurant we have," Santana said, describing Albertanos' offerings as authentic Mexican food in a fast-paced restaurant setting.

"We're excited to be here and hopefully people like us," she said.

Santana said the restaurant will open early for the breakfast crowd with a menu that features a variety of breakfast burritos. Albertanos will be open until 10 or 11 p.m., she said.

While Albertanos is known for its breakfast burritos, she said, another popular feature is the Wyoming or Bozeman fries. That's essentially an order of French fries loaded with toppings that include chorizo, bacon, salsa, pico de gallo, guacamole, cheese and sour cream.

"It's a meal for two," Santana said.

Another popular feature at the restaurant is menudo, a soup only prepared and available on the weekends, she said.

A drive-thru option will be available for customers, although, Santana said, that may not be ready when the restaurant first opens. For those who like to use Door Dash as a delivery option, it will be available.

The juvenile novel follows a year in the life of Santa and Uncle Sam, who meet on vacation and decide to switch roles because of their uncanny resemblance — an observation only Santa can see. The misfit switch faces problems when Santa’s jolly perspective is upended and Christmas is put in jeopardy," according to a news release. The book is available in paperback and Kindle format on Amazon.
