New all-American food truck in Evansville. Here's the scoop.

EVANSVILLE – Wait, is it the Fourth of July already?

No, but they celebrate America every day at JT’s American Food on the Fly, a new food truck on the streets of Evansville. The star-spangled food trailer can be found at events dishing up favorites from burgers and mozzarella sticks to cheesecake. Here are the details.

The backstory

The Heath family from Wadesville, Indiana, owns the truck, which has been on the road for only a few weeks. You’ll find mom Toni, dad John, and daughters Jenna, Alyssa and Kylee cooking up the goodies.

The Heaths don’t have restaurant experience, but they know all about eating on the run. They own a Motocross company called Heath MX Racing and go to racing events, and all their kids are in sports.

“It seems there are never enough food trucks at events, or else they run out of food,” Toni said. “A food truck is something my husband has talked about for a few years as a business opportunity. Since our kids are in sports and it's hard for them to commit to a regular job, it gives them a way to work as they are able. We had the truck custom built, and chose equipment specifically so we can have a core menu but experiment and come up with specials for each event we attend."

On the menu

On the everyday menu, you’ll find classic fair favorites such as burgers and hot dogs, fries and nachos, taco salads, walking tacos and cheesecake, but it’s all a little special.

The meat is local, for example, and comes from Dewig’s in Haubstadt. There’s even a fried German bologna sandwich made with Dewig’s famous German bologna.

Burgers are a quarter-pound of 100% beef, and hot dogs are jumbo-sized and likewise all-beef. Fries are extra-fat crinkle cut, just right for dousing in nacho cheese sauce.

Each event the truck attends will have its own signature entrée. For the recent Evansville Horror Con, Toni invented a “Monster Burger" with mozzarella sticks and marinara sauce atop the beef patty. It was so well-received it is now on the regular menu.

The future

Looking ahead, You’ll find JT’s American Food on the Fly at all kinds of summer events. You’ll find it at brewhouses, sports events and many others. Look for menu additions as time passes − loaded taco fries will be on the board soon.

“I’m looking forward  to this new journey,” Toni said. “It’s been extremely busy and it’s taken a lot of time, but the reception has been tremendous.”
