Ashburn Restaurant Inspections: Asia Cafe, Pho Royal, Jersey Mike's

ASHBURN, VA — Multiple restaurants around Ashburn, Dulles, and Sterling recorded violations during recent inspections from the Loudoun County Health Department. The most recently published inspections occurred between March 23 and March 29.

COVID-19 restrictions have relaxed around the state, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

    • Total violations: 1

      • Employee restrooms in kitchen observed without covered receptacle.

  • Asia Cafe, 43150 Broadlands Center Plaza #106 Ashburn, VA 20148

      • Date marking not provided to beef egg rolls and brown rice prepared three days prior held in boxes in walk in refrigerator. Said food is held up to 7 days as per the PIC.

      • One open bag and two new bags of baking soda observed stored on shelf with can and bagged food items.

      • Rice scoops observed stored in containers of standing water at room temperature next to the rice warmers in kitchen.

      • Cutting board on top of low boy refrigerator in kitchen observed deep cuts, dirty and discolored.

  • Ledo’s Pizza, 42920 Piccadilly Plaza #136 Ashburn, VA 20147

    • Date inspected: March 23

    • Total violations: 2

      • In pizza station raw bacon was over RTE food. Separate raw animal foods during storage, preparation, holding, and display from raw RTE food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food. Person in charge moved item under the RTE food.

      • 1 door glass reach in cooler 45F is at an improper cold holding temperature.

  • Au Bon Pain CM-375, 1 Saarinen Circle Sterling, VA 20166

    • Date inspected: March 24

    • Total violations: 1

      • Temperature control for safety (TCS) food items such as turkey, chicken, cheese registered at 44°F to 46°F in the top section of one door low boy refrigeration unit in front food prep area next to the oven. Said unit registered operating at 41°F. As per the PIC said unit was left open during busy morning rush and also as it is located next to the oven.

  • PHO Royal, 46839 Maple Leaf Pl Sterling, VA 20164

    • Date inspected: March 24

    • Total violations: 5

      • Observed there to be no certified food manager present upon entry.

      • Observed the following items stored in the walk in over night: Cooked Shrimp 47F, Bean Sprouts 49F, Pho Beef Broth 48F, Pho Chicken Broth 47F.

      • Observed Rice Scoop Stored in Stagnant Water.

      • Observed chlorine bleach test strips to have expired (8/2021).

      • Observed 1 mop inverted and pressed against wall. Observed second mop drying outside against building wall.

  • American Tap Room, 1 Saarinen Cir. Dulles, VA 20166

    • Date inspected: March 24

    • Total violations: 4

      • Raw salmon and raw steak registered at 47°F in two door lowboy refrigerator in kitchen. Said unit registered operating at 47°F. Said food had been in said unit for 4 hours.

      • A review of the current menu with the foodservice operator indicates that there is no consumer advisory for the beef burger that may be served raw and/or undercooked. As per the PIC, the facility is currently offering limited food items and using temporary menu.

      • Unlabeled food containers with the following food items that are not easily identified by appearance: container of sugar that was placed next to the container of salt in kitchen.

      • Sanitizer test kit not provided to measure the sanitizer level at the bar.

  • The Don’s Wood-Fired Pizza, 21018 Southbank St Sterling, VA 20165

    • Date inspected: March 28

    • Total violations: 4

      • A serving spoon with visible food debris on it was found stored with clean utensils.

      • Containers of wings, fresh mozzarella, and meats were found in the walk-in cooler and in the low boy cooler on the front line with no date marking.

      • An open container with fresh mozzarella in liquid was found stored on the floor of the walk-in cooler, uncovered.

      • The deflector in the ice machine was observed with soil residue accumulating on it.

  • Jersey Mike’s Subs, 20070 Ashbrook Common Plaza #197 Ashburn, VA 20147

    • Date inspected: March 28

    • Total violations: 5

      • During the time of inspection, establishment did not have signed employee health policy forms by individual staff members.

      • Employee observed touching raw food item with gloves and using same gloves to touch utensils to cook food item.

      • Observed an unlabeled chemical spray bottle in dry storage area of the establishment.

      • Soda pouch container stored on the floor in dry storage area. Box of bread was also stored on the floor in the walk-in freezer.

      • Observed container of Advil in food preparation area.

  • Lemon Hookah Lounge, 45985 Regal Plaza #100 Sterling, VA 20165

    • Date inspected: March 28

    • Total violations: 5

      • The facility does not have verifiable means of an Employee Health Reporting Agreement.

      • Raw chicken was found stored above raw beef and ready to eat Mozzarella Cheese.

      • Knives and utensils found stored to the right of the grill were found with food debris on them.

      • A container of white rice was found cold holding at improper temperature (48F).

      • The surfaces/handles of the low boy cooler have a moderate accumulation of dirt/soil residue.

  • Wong Kok Asian Cuisine, 43090 Peacock Market Plaza # 170 South Riding, VA 20152

      • Raw egg holding over ready to eat vegetables in prep cooler.

      • Facility is using time as control for noodle, bean sprout and corn without written procedure.

      • Observed large pots that do not fit in the compartments of three compartment sink and the dishwasher.

      • Observed Rice Scoop and Ice Cream Style Scoop being used to scoop rice in a container with ambient temperatured water. Observed 3 Tongs being stored on Oven Handle, Pressing against oven door.

      • Observed slight accumulation in microwave.

      • Observed Raw Shell Eggs stored over Bean Sprouts and Green Onions in 2 DR Prep Top.

  • Sugarland Elementary School, 65 Sugarland Run Drive Sterling, VA 20164

    • Date inspected: March 29

      • The hand sink located to the left of the dishwasher was observed with ice discarded in it.
