Ashburn Restaurant Inspections: Passion Fin, Ashburn Pub

ASHBURN, VA — Several restaurants around the Ashburn area were cited with violations during the most recent round of inspections by the Loudoun County Health Department. Inspectors visited the locations between Jan. 5 and Jan. 11.

As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

Here are the most recent inspections from the Ashburn area, as they were written by the Loudoun County Health Department.

    • Date inspected: Jan. 5

    • Total violations: 3

      • Observed the following foods stored in the right side sushi prep cooler at improper temperatures: spicy tuna 43F, lobster salad 43F, salmon 43F. All foods stored in prep cooler moved to walk in for quick cool down. Ambient air temperature in refrigeration unit observed at 45F.

      • Observed the following foods stored in areas subject to splash and contamination: Container of lettuce stored adjacent to hand sink, and large containers of sugar, brown rice and flour stored directly beside dirty dish side of 3 compartment sink.

      • Sushi prep cooler located on right observed with inadequate ambient air temperature of 45F.

  • Hyatt Place Sterling / Dulles, 21481 Ridgetop Circle Sterling, VA 20166

    • Date inspected: Jan. 5

    • Total violations: 3

      • Observed Hand Sink in back of house to be blocked by boxes, a door, and various cleaning supplies.

      • Observed buildup in microwave.

      • Observed Milk at 54F, Skim Milk at 56F, and Half and Half at 55F in the self service area of the breakfast set up, yogurt at 66F, and Cream Cheese at 67F. In the back of house observed Cream Cheese at 68F and Hummus at 68F

  • Burgerim, 22855 Brambleton Plaza #100 Brambleton, VA 20148

    • Date inspected: Jan. 5

    • Total violations: 5

      • There was no PIC present at the time of inspection.

      • Observed ambient temperature thermometer in the hand sink across from the dish machine.

      • No paper towels present at the hand sink at the front counter or the hand sink in the utensil storage area.

      • Chlorine sanitizer concentration was at 300ppm.

      • Buns stored less than 6" off the ground

  • El Mercadito Hispano II, 250 Sterling Boulevard Sterling, VA 20164

    • Date inspected: Jan. 5

    • Total violations: 10

      • Observed staff switching from using cell phone to flipping beef on grill multiple times.

      • Hand sink near grill and near meat display are utilizing a wash cloth as the only means of drying hands.

      • Observed a bottle of hand lotion and no hand soap at handsink near front meat display.

      • Observed Hand Washing sink near back door to be used to store brushes and soap stone (for sharpening knives.)

      • Observed several food items uncovered in the freezer that are not in a state of cooling, such as pork, beef, and shredded romaine lettuce. 470(A)(3-8) Packaged and Unpackaged Food-Separation, Packaging and Segregation.

      • Observed Rice with Vegetable Mix hot holding at 113F

      • Observed several cups of cream over stacked in a unit that is incapable of maintaining an ambient temperature of within plus or minus 3 of the required 41F necessary to prevent growth of bacteria.

      • Observed Tongs stored in hole on grill, rice scoop stored sidewise inside of rice pot contacting the rice, and Tongs stored on top of Pupusa hot holding unit.

      • Observed Bev Air 2 DR Prep Top to not be maintaining temperature required for proper cold holding/cooling.

      • Observed Wet mop stored in a standard white bucket near the back door.

  • Pizza Hut #37444, 402 S. Sterling Blvd Sterling, VA 20164

    • Date inspected: Jan. 5

    • Total violations: 2

      • Observed there to be no ambient air thermometer in the walk in unit.

      • Observed Quat test strips to be expired on "7/16/2025" and no Bleach test strips (for dishwashing machine) to be on site.

    • Total violations: 2

      • A fully cooked ready to eat ham observed stored on a speed rack in the walk in cooler below a tray of defrosting raw chicken breasts.

      • An employee coat observed hanging on an equipment rack touching clean utensils (whisks, spoons, tongs etc.)

      • The following food contact equipment is observed stored soiled to sight and touch: The clean in place slicer is observed with debris build up near the blade and the dining area carbonated drink machine ice shoot is observed with a thick accumulation of a moist black residue.

      • Observed chlorine sanitizer concentration at wiping cloth bucket well above 200ppm.

      • Observed missing ceiling tile above 3 compartment sink and several missing tiles above walk in cooler.

  • Ashburn Pub (The), 44110 Ashburn Shopping Plaza #196 Ashburn, VA 20147

    • Date inspected: Jan. 6

    • Total violations: 5

      • Person in charge is not ensuring large pieces of food contact equipment is properly sanitized after cleaning, and is not monitoring temperatures of foods being cold held and cooled.

      • Observed 2 bags of lettuce stored directly on top of container of raw hamburger patties and sleeve of raw chorizo stored in box with whole tomatoes.

      • Observed ice machine deflector with accumulation of black debris.

      • Observed improper cooling temperatures of chili. 2 large containers of chili observed cooling in ice bath at improper temperatures 99F, 89F at 2:00pm. Chili prepared and put in ice bath at 8:30am. Cook temperature could not be verified nor could the actual time the chili entered the temperature danger zone.

      • The following foods observed cold holding at improper temperatures in walk in cooler: feta cheese 46, cut lettuce 45, chicken wings 46, 45.

  • Carolina Brothers Pit Barbecue, 20702 Ashburn Rd Ashburn, VA 20147

      • Observed pork ribs in hot holding cabinet at 113F, 116F person in charge said ribs were placed in the hot holding cabinet about an hour and half before.

      • Observed pulled chicken and pork in containers that had a use or freeze date of 14 days.

      • Observed can drink stored in ice machine.

      • Pans and strainers on dish drying rack were stacked, preventing air drying

      • Verifiable means of an employee health reporting policy were not able to be reviewed when requested.

      • The low-temperature dish machine in the kitchen and at the bar is not dispensing sanitizer during the final rinse, not sanitizing dishes.

      • Several items on the line that are held in containers that are on ice were found outside of appropriate temperatures.

      • Regular, non pasteurized raw shell eggs are being used to make the Pisco Sour drink.

      • Tuna on reduced oxygen packaging (ROP) was found thawing while still in the package.

      • There are no test strips to test the sanitizer levels of the chlorine dishwasher in the kitchen and at the bar.

      • Commercially processed prepared Ready to eat (RTE) TCS (Time/temperature control for safety) foods are date marked with a time frame that exceeds 7 days when the package/container is opened and held at 41F or less.       • Facility does not have any quat sanitizer test strips to test the sanitizer concentration at the three compartment sink.
