Ashburn Restaurant Inspections: Red Lobster, Phorever, Brew Birds

ASHBURN, VA — Several locations around Ashburn, Dulles, and Sterling recorded violations during recent inspections by the Loudoun County Health Department. The most recent inspections occurred between April 6 and April 12.

COVID-19 restrictions have relaxed around the state, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

      • Observed 2 microwaves in back to have slight accumulation.

      • Observed the follow items cold holding out of temperature at the line: Sliced Tomatoes 45F, Shredded Romaine Lettuce 49F, Chicken Salad 47F, Ham 46F, and Roast Beef at 45F.

      • Handwashing near the walk in refrigerator observed broken and not in use.

      • Heavy accumulation of grease observed on the ventilation hood.

      • Several unused equipment and furniture observed stored throughout the facility in kitchen, restroom and in dinning area.

      • Encrusted grease deposits and/or other soil deposits were observed on the food contact surfaces of the following cooking equipment, grease and old food debris observed on floor in kitchen.

      • Proper test strip not provided for measuring the concentration of the sanitizer level.

      • Several utensils observed stored in a container of standing water in kitchen.

      • Food storage containers or working containers of food ingredients that have been removed from their original containers are not labeled to identify the contents.

      • Date marking not provided for prepared ready to eat food items such as chicken biryani, chicken curry, chickpeas and chutneys in the three door reach in refrigeration unit. As per the PIC said food items were prepared more than 24 hours prior and can be held for up to 5 days.

      • All handwashing facility in the facility observed without paper towels.

      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.

      • Establishment is unable to provide procedures for employees to follow when responding to vomiting or diarrheal events.

      • Several handwashing facilities throughout the facility observed without soap and/or paper towels.

      • Date marking not provided to several food items such as potato salad, meat sauce, grilled chicken, white rice and coleslaw in the walk in refrigerator.

      • In-use utensils improperly stored between use in that scoop for soup was observed stored in warm water at 112°F.

      • EHS observed the meat slicer visibly dirty with food debris on food contact areas.

      • This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.

      • Handwashing facility at the drinks prep area with liquors observed being used as dump sink.

      • Several live fruitflies observed at the bar and in the drinks prep area in the kitchen.

      • Thermolabel or the maximum temperature recording thermometer not provided for the high temperature dishwasher.

  • Taste Of Vietnam, 46005 Regal Plaza #110 Sterling, VA 20165

    • Date inspected: April 11

    • Total violations: 8

      • EHS observed an employee using the hand sink as a dumping station.

      • There are no hand drying provisions at the handwashing sink.

      • Spring rolls, cooked meats and hydrated noodles were found with no date marking.

      • Cut lettuce, cabbage, hydrated noodles are kept at room temperature using time as the public health control. No documentation of the time that the food items left refrigeration are available.

      • Several spray bottles were observed with chemicals in them and no identifying information.

      • EHS observed an outdoor bug zapper operating in the kitchen. The device does not have a catch tray to contain insects that have been killed.

      • Cooked beef bones were found stored in a container directly on the floor of the walk-in cooler.

      • EHS observed paddles for rice stored in a container with stagnant water.

    • Total violations: 4

      • The person in charge (PIC) was not able to produce a verifiable employee health reporting agreement for each of the food employees.

      • TCS foods in the self service food lines are being held under time control and the facility does not have written procedures for the use of time as a public health control for TCS foods on file. Time is also not being tracked while the TCS food is held out of temperature control.

      • The food establishment is house pickling (quick pickle) vegetables ( asparagus, green beans, artichokes, and carrots) and holding the vegetables at room temperature on the serve line. Facility does not have a variance approval for pickled vegetables. Vegetables are heat treated in the pickling process (hot boiling pickling liquid is poured on top of the raw vegetables).

      • EHS observed knives being stored in sanitizer buckets filled with sanitizer. Knives improperly stored in between use.

      • Observed: Beans in prep table registered (cold holding) temperature above 41F.

      • High temp dish machine at front counter: there is no irreversible thermometer with which to check temp. of 160F or higher surface temperature of wares.

      • The following food item(s) is not from an approved food preparation/processing facility in that cakes/pastries observed in the display case refrigeration unit is from Malgudi (restaurant) in Ashburn.

      • Raw shell eggs observed stored above raw vegetables and raita (ready to eat yogurt sauce) in the walk in refrigerator in kitchen.

      • Goat curry registered at 44°F in low boy refrigerator in kitchen. Said low boy refrigerator registered operating at 44°F.

      • Date marking not provided to ready to eat prepared goat curry, raita (yogurt sauce) and desserts (squash pudding with milk and cooked apricot sweets with cream) held in refrigeration units at the facility. As per the PIC said food are held for more than 24 hours.

      • Heavy accumulation of old food debris and grease observed on side of the fryer and on the floor.

      • There is no covered receptacle for sanitary napkins in the toilet room used by females.

  • Kitchen by Wolfgang Puck(The), 1 Saarinen Cir. Dulles, VA 20166

    • Date inspected: April 6

    • Total violations: 3

      • The methods used for cooling were not adequate. EHS observed two 3rd pans stacked to the rim with chicken breasts that were cooling in the pull out drawer line cooler. Pans of chicken breasts were also covered. The person in charge stated the chicken was cooked an "hour or two" prior to the inspection and were placed in the line cooler to cool.

      • EHS took the food temperature of rice hot holding in the steam table at the line. The rice registered at 62F. The person in charge stated that the rice was cooked early in the morning >6 hours prior and is hot held until service which starts at 3pm. The steam table appears to be off or not functioning. Rice is hot holding at improper temperatures.

      • EHS observed two flats of raw shell eggs stored on a shelf above bags of lettuce in the stand up cooler in the back prep kitchen. EHS also observed raw shell eggs stored in the same container (3rd pan) as leafy green lettuce on the line.
