Ashburn Restaurant Inspections: Saigon Cafe, Nando's Peri Peri

LOUDOUN COUNTY, VA — Several restaurants around the Ashburn area were cited with violations during the most recent round of inspections by the Loudoun County Health Department. Inspectors visited the locations between Dec. 22 and Dec. 28.

As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

Here are the most recent inspections from the Ashburn area, according to the Loudoun County Health Department.

  • OXUS7, 20937 Ashburn, Rd #125 Ashburn, VA 20147

    • Date inspected: Dec. 22

    • Total violations: 7

      • Observed raw carrots with dark spots.

      • Raw shelled eggs stored next to yogurt.

      • Observed dishes in dishwasher with 0ppm chlorine.

      • Observed gyro meat on heating element at an improper cooking temperature 113F placed on element at 11:30AM.

      • Observed mixed greens (56F, 56F, 54F) at an improper cold holding temperature. Hankat begandi 51F.

      • Observed fish (salmon and sea brass) in reduced oxygen packaging sealed bag thawing.

      • Observed 1 door reach in cooler 54F an improper cold holding temperature.

  • Saigon Cafe, 20921 Davenport Drive #108 Sterling, VA 20165

    • Date inspected: Dec. 27

    • Total violations: 11

      • The facility does not have a policy/procedure for the proper clean-up of vomit or diarrheal events.

      • EHS observed an employee make three summer rolls with their bare hands and plate them for service.

      • No hand towels were observed at the handwashing sink in the kitchen.

      • Raw shrimp, scallops, and squid were observed stored over grilled beef.

      • Knives that were stored on a magnetic knife block on the wall were observed with raw proteins still on them.

      • A pot of chicken broth was found at improper temperature (104F) stored beside the fryer. When questioned PIC stated that the broth is reheated and then stored at room temperature until it is reheated to order.

      • No date marking is being done at this facility.

      • Cooked Fish balls, cut lettuce, and cut cabbage were found stored on the counter using time as the public health control with no written procedure to confirm/follow the time the food is left out.

      • The salt/MSG and sugar were observed stored together without proper labeling.

      • EHS observed spring rolls in the walk-in cooler stored directly on dishwashing trays/racks and uncovered. EHS also observed a large container of uncooked rice exposed with no top/cover.

      • EHS observed a bamboo cutting board that has a deep crack down the middle of the board.

  • Four Sisters Snack Bar, 43670 Greenway Corporate Dr # 106 Ashburn, VA 20147

    • Date inspected: Dec. 27

    • Total violations: 2

      • Seven bags of homemade beef jerky observed on shelf with dry food snacks being sold for consumption to customers.

      • Date marking not provided to a container of pork spring rolls in the walk in refrigerator. Said spring rolls were prepared four days ago.

  • Y-Tea, 22621 Amendola Terr #185 Ashburn, VA 20148

    • Date inspected: Dec. 27

    • Total violations: 1

      • Date marking not provided to prepared food items such as tapioca in milk, cream brulee, tiramisu (milk and cream) observed in the reach in refrigeration unit in kitchen.

  • Tropical Smoothie Cafe VA 12, 20598 East Hampton Plaza Ashburn, VA 20147

    • Date inspected: Dec. 28

    • Total violations: 1

      • Date marking not provided on cooked sweet potatoes in walk in refrigerator. Said food were prepared a day before.

  • Country Inn & Suites, 45620 Falke Plaza Sterling, VA 20166

    • Date inspected: Dec. 28

    • Total violations: 5

      • Two spray bottles containing cleaners were found in the kitchen area with no identifying information.

      • Milk (44F) and hard-boiled eggs (64F) were found cold holding at improper temperatures.

      • The facility is not sanitizing serving utensils before use, after cleaning. When asked, the employee stated that all they use is dish soap.

      • There are no hand drying provisions at the handwashing sink in the kitchen.

      • The facility was unable to produce verifiable means of an employee health reporting policy when requested by EHS.

  • Nando’s Peri Peri, 20556 East Hampton Plaza Ashburn, VA 20147

    • Date inspected: Dec. 28

    • Total violations: 3

      • Handwashing facility next to the three compartment sink observed without hot running water.

      • Improper thawing observed in that several frozen bags of mashed potatoes observed thawing in prep sink at room temperature.

      • Two dead roaches observed on floor in office/dry food and goods storage room.

  • Cooper’s Hawk Winery & Restaurant, 19870 Belmont Chase Blvd. Ashburn, VA 20147

    • Date inspected: Dec. 28

    • Total violations: 2

      • Observed shredded mozzarella 47F,48F at an improper cold holding temperature. Person in charge stated that it had been in the prep cooler for a about an hour.

      • Observed food items not being cooled properly. Food items found in prep cooler sliced tomatoes 52F, 53F, cut cherry tomatoes 45F, blacken tuna 50F, and tuna 46F, 50F (blacken tuna was seared and placed in the same drawer as the tuna). Food items had recently prepped. Short ribs 51F place in prep cooler after being prepped an hour before.

  • Ledo Pizza, 45995 Regal Plaza Sterling, VA 20165

    • Date inspected: Dec. 28

    • Total violations: 3

      • Meatballs in broth were found hot holding at improper temperature (98F).

      • Ready-to-eat bone-in wings and chicken strips were found in opened bags with no date marks. Pre-portioned cooked pasta was found with no date marking.

      • EHS observed soil debris (black residue) on the deflector of the ice machine.

  • Mi Hacienda Restaurant & Sports Bar, 21430 Cedar Dr #122 Sterling, VA 20165

    • Date inspected: Dec. 28

    • Total violations: 12

      • No person in charge has oversight of the cooking, cooling, and general temperatures of food being prepared within the facility.

      • The person in charge was not able to provide a certificate for a certified food protection manager.

      • The facility does not have verifiable means of an employee health reporting policy.

      • EHS observed a makeshift ashtray with spent cigarette butts on the shelf above the line. A pack of cigarettes and a lighter were also observed next to the ashtray.

      • There is no hand soap at the handwashing sink at the bar.

      • The facility does not have any verifiable means of parasite destruction.

      • Raw shell eggs were found stored over ready to eat foods in the reach-in cooler in the back portion of the kitchen

      • Several items within the reach-in coolers were above proper temperatures.

      • No date marking of food items was found at the time of inspection.

      • A full bag of whole raw chickens was observed thawing in a pan of stagnant water at the prep sink.

      • EHS observed multiple areas where rodent activity is present. No traps or other forms of pest control were found to be in use.

      • Several open containers of dry goods were observed open, without tops/coverings
