Ashburn Restaurant Inspections: Slapfish, Vocelli Pizza, Potbelly's

ASHBURN, VA — More than a dozen restaurants around Ashburn, Dulles, and Sterling recorded violations during recent health department inspections. The most recently published inspections occurred between March 30 and April 5.

COVID-19 restrictions have relaxed around the state, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

      • Observed 2 inverted mops pressed against wall in mop sink to dry.

      • There is no person in charge with a valid Food Protection Manager Certification from an accredited agency recognized by the Conference for Food Protection.

      • Yogurt placed on ice registered at 51°F in self service buffet area.

      • Maximum temperature recording thermometer or thermolabel not provided for high temperature dishwasher.

      • Food employees drinking from water bottle and open cups without straw in food prep in kitchen.

      • Hand washing facilities throughout the establishment observed without paper towels.

      • Improper date marking in that Ceviche (with cooked shrimp) in the walk in refrigerator observed dated to be held for two weeks.

      • Improper methods used to thaw ROP fish in the walk in refrigerator.

      • There is no covered receptacle in the toilet room used by females.

      • Person in charge (PIC) was unable to provide the signed copies of food employee reporting agreement (form 1B) during inspection.

      • Several containers of cut lettuce and sliced tomatoes registered at 44°F in one door low boy refrigeration unit at the back in front food prep area. Said unit registered operating at 47°F.

      • Water filter on rear wall in kitchen for soda and drinks observed leaking.

    • Raw shell eggs observed placed above the containers of ready to eat sauerkrauts and pickles in the walk in refrigerator.

      • Observed employee foods in a variety of places next to slicer in walk in cooler.

      • The facility is need of overall cleaning EHS slid on the floors with slip resistant shoes.

      • Observed a variety of items (empty boxes, not in use 2 portable A/C, used dough containers) that cluttered the back area.

      • Observed a build up of food (non food contact) at oven that has not been cleaned.

      • Observed can opener and slicer with build up of food debris.

      • Person in charge could not provide any documentation that employees have been trained to the signs, symptoms, and exposures of foodborne illnesses and who to report.

      • Raw animal food holding in a manner that may cause cross contamination of to ready-to-eat food (RTE) in that raw chicken and beef observed stored over cut vegetables (sliced tomatoes, onions and peppers) in the low boy drawer refrigeration unit in kitchen and in walk in refrigeration unit.

      • A tray of prepared rice registered at 117°F on hot holding unit in kitchen. Said rice was prepared a day prior and cooled. It was taken from the walk in refrigerator, reheated in microwave and placed on hot holding unit.

      • Date marking not provided to food items such as shrimp and scallops mix, pork, refried beans in the walk in refrigerator. Said food were cooked three days prior and had been cooling in said walk in refrigerator and will be held for up to 4 days.

  • QW Tripleseven Inc., 21031 Tripleseven Rd #180 Sterling, VA 20165

    • Date inspected: April 4

    • Total violations: 7

      • The facility does not have a process to properly clean vomit & diarrhea.

      • EHS observed an employee dumping waste liquid from a container into the handwashing sink. Multiple items were found stored in the hand sink to the right of the three basin sink.

      • EHS observed a line cook drop raw chicken, from the grill, into an open bin of raw shrimp then remove the chicken from the shrimp to place back on the grill and then close the drawer containing the shrimp.

      • Cut cabbage on the line was observed in a tub at room temperature with no accompanying time log.

      • Time logs for the Sushi rice have not been filled out since 2/28/22. Time is not being logged or monitored.

      • EHS observed tuna thawing in Vacuum packaging, with the seal still intact.

      • EHS observed sanitizing buckets stored directly on the floor.

  • Virginia Academy, 19790 Ashburn Rd Ashburn, VA 20147

    • Date inspected: April 4

    • Total violations: 2

      • The handwashing facility located at the kitchen is blocked, preventing access by employees for easy handwashing in that said handwashing sink observed with bowls and strainer placed in it.

      • Dry food in storage room observed placed on floor. Food items shall be placed 6 inches off the ground.
