Austin's best pizza trailer is putting down roots. Or putting up walls, I guess. Sammataro, which started as a pizza pop-up before graduating to a trailer in Lost Creek that eventually moved to East Austin, has taken over the former 40 North space at 900 W. 10th St. near Lamar Boulevard. The restaurant is slated to open January 20.

Sammataro co-founder Isaac Flores started the business as a pop-up in East Austin in fall 2020, taking inspiration from his two favorite NYC spots, Lucali in Brooklyn and Scarr’s Pizza in the East Village.

Flores puts his dough through a 48-72-hour cold fermentation. He then bakes the 16-inch pizzas in a low-domed, wood-fired oven, realizing his dream of a fantastic pizza with a puffed and torched edge run through with a crunchy base that gives just the right amount of wiggle and pull. Toppings made from premium ingredients complete the pricy pies. The menu at the new Sammataro will also feature meatballs, salads, fresh pulled mozzarella and more.

That's not the only good pizza news hovering over Austin. Townsend Smith, one of Flores's founding partners at Sammataro and the chef whom Flores says taught him how to make the perfect dough, is opening two locations of pizza operation Allday Pizza, at the forthcoming Flo's Wine Bar & Bottle Shop at the northern edge of Tarrytown and at Day Dreamer bar in East Austin later this year.

Other recent additions to the city's pizza scene include Dovetail Pizza, from the owners of Salt & Time and Lenoir; and the owners of L'Oca d'Oro plan on opening a pizza restaurant in East Austin later this year.
