Ballantyne lands New Orleans-style brunch restaurant as chain expands in Charlotte area

A popular New Orleans-style brunch chain is expanding again in Charlotte.

Ruby Sunshine is opening a Charlotte-area restaurant at 12330 Johnston Road in Ballantyne, according to the restaurant’s website. It expects to open this summer in the former Cantina 1511 space at Toringdon Circle Shopping Center.

The new location has 150 seats inside and over 50 seats on an exterior patio, Ruby Slipper Restaurant Group said Tuesday.

The south Charlotte restaurant is hiring for positions for kitchen manager, cooks, servers, bussers and hostesses, according to the company’s website. About 40 workers will be hired, the restaurant group said.

A downtown Matthews Ruby Sunshine was expected to open this summer. However, Ruby Slipper Restaurant Group said Tuesday it has “made the decision to pivot from opening a Matthews location at this time.”

Ruby Sunshine, which serves a New Orleans twist on Southern brunch classics, made its North Carolina debut three years ago at 332 W. Bland St. in South End.

The restaurant mirrors the original Ruby Slipper Café in New Orleans. The menu includes dishes like eggs cochon and bananas foster painperdu, as well as a variety of benedicts, pancakes and French toasts. The all-day brunch concept is open for breakfast and lunch only.

Ruby Sunshine also will open a Columbia store this summer, The State newspaper reported. South Carolina has two locations in Charleston.

The Ballantyne store is the only new Charlotte location planned at this time, Ruby Slipper Restaurant Group said.

Ruby Slipper Restaurant Group operates two brands — Ruby Sunshine and Ruby Slipper Cafe. Including the Carolinas, the Southern chain has 17 locations in Louisiana, Florida, Alabama and Tennessee, according to the company’s website.
