Bavette restaurant is getting a pop-up bakery and coffee shop by Matilda Bakehouse

Croissants, cinnamon knots and more will be sold at Bavette la Boucherie in the Third Ward as Matilda Bakehouse begins its pop-up there.

Customers can buy sweet and savory pastries, coffee and espresso drinks from 7 to 10:30 a.m. Thursdays to Sundays. The pop-up will run indefinitely.

Matilda is operated by Allie Fisher, whose background includes pastry work in fine dining before starting her business in the pandemic.

She also sells her baked goods at the Fox Point and Shorewood farmers markets, and her pastries can be found at Space Time Coffee, 819 N. Marshall St., and other area businesses.

At the Bavette pop-up, customers can expect to find weekly staples such as cinnamon knots (elaborately folded cinnamon rolls) and plain, chocolate and almond croissants. Items like cookies and crumb cake likely will be on hand.

Matilda also makes savory pastries, such as ham and cheese croissants and an "everything" croissant — everything-bagel seasoning over cream cheese filling baked into the roll.

Seasonal items will come and go, such as the strawberry rolls in spring and pesto, tomato and mozzarella croissants later in the season.

Prices range from about $4 to $6.50 apiece for croissants and similar pastries.

Fisher plans to make desserts that will be sold by the piece and likely sold whole around the holidays.

One early pop-up dessert is expected to be individual blueberry amandine tarts "that you could have for breakfast if you’re having a bad day. Or a good day, who knows. Or pick up six for dinner that night," Fisher said.

Fisher expects customers will take their pastries and coffees to go, but sidewalk seating is available for them. So are tables inside, but Bavette's lunch service starts at 11 a.m.

Bavette is operated by chef and owner Karen Bell, who was a finalist this year for a James Beard Award.

"It’s nice working with a really known female chef, but I also think, just based off both our businesses, this is ideal," Fisher said of the pop-up.

Bavette is at 217 N. Broadway.
