Behind the scenes look at the revamped Kevin Lee's Birdie's: Modern Korean comes to Edmond

With bold flavors and creative dishes, chef Kevin Lee is set to bring north Oklahoma City and Edmond a dining experience unlike anything else in the area.

When Lee originally opened Birdie's, 2201 NW 150th St. Suite 200, it was an unassuming Korean fried chicken spot serving up delicious food. Now, as the restaurant prepares for a Jan. 30 grand re-opening as Birdie's by Chef Kevin Lee, the delicious food is being elevated to new heights and the atmosphere has been completely revamped thanks to a three-week-long renovation process.

A once bright orange interior has given way to sleek, sophisticated black walls accented with gold. White and jeweled blue hues in dishware provide pops of accent colors as tables set with forks, spoons and high quality chopsticks await guests.

The menu, though still being finalized by Lee, has been overhauled just as thoroughly as the restaurant interior. Previews featured small and large shareable plates, steak dishes and desserts featuring global flavors and techniques from throughout the Asian diaspora, with especially heavy Korean influence.

From a refreshingly sweet and spicy hamachi crudo, a mouthwatering sweet potato burrata, perhaps one of the best Brussels sprouts dishes I've had in the city and a kimchi pancake served with house-made yuzu ranch as small plates to tteokbokki, bibimap and sticky ribs offered up as large shareables, expect balance from Lee's shareable plates overall, but don't be surprised if you notice a bit of heat coming through.

In addition to shareable plates, Lee is also taking on steaks, searing them perfectly and offering them up with a grilled onion, lettuce for wrapping and three distinct sauces — a pirilla leaf chimichurri, garlic ginger soy sauce, and a peanut ssamjang.

Finally, pair your meal with any number of drinks including choice wines and house special margaritas, mules, and more. During previews, Lee also featured two dessert options: black sesame crème brûlée and Melona popsicles.
