Belgian chocolatier banks on grass-flavoured bunnies

Introducing: grass-flavored Easter chocolate

Location: Bruges, Belgium

(SOUNDBITE) (English) BELGIAN CHOCOLATE MAKER, DOMINIQUE PERSOONE, SAYING (DESCRIBING A NEW TYPE OF PRALINE HE DEVELOPED):

"When you were a classic chocolate maker (you were expected to) make classic recipes: caramels, praline, marzipan and it's OK. We have marzipan bonbons too. But I think today, the customer wants to go on adventure also when they are eating something. // So we made a juice of grass, Granny Smith (apples) and, to put an extra acidity on it, we used the Japanese lime yuzu and the combination of those two, it's amazing. It's of course important to find the right balance between your chocolate, origin chocolate, and then those flavors."

Bruges is usually bustling with tourists over Easter

But with travel restrictions still in place

Dominique hopes his unique flavors will attract local customers

(SOUNDBITE) (English) CUSTOMER AND BLANKENBERGE RESIDENT, NICK CALLIER, 25, SAYING:

"Now I'm going to buy something for me and my girlfriend because we are not seeing much of our friends. It's very hard and that makes life a little bit better so I would say chocolate makes life a bit better."
