Berks food safety inspections February 10 to February 23, 2021: Oven, floor, walls, tables have heavy dust, dirt and food debris

Feb. 26—The Pennsylvania Department of Agriculture keeps records of food safety inspections at restaurants and food vendors.

Berks County is divided into three jurisdictions: Reading, Muhlenberg Township and the rest of the county. Reading and Muhlenberg Township have their own inspectors and the rest of the county is inspected by Pennsylvania Department of Agriculture inspectors.

The results will be posted every other week. All food vendors are inspected at least once a year. Other inspections can be triggered by a change of owner, a follow up if a facility had been out of compliance or by a complaint filed with the PDA.

If a food provider is labeled out of compliance, that means it has one or more violations that require a return visit by an inspector. The establishment is given time to fix the problem(s) and remains open for business.

Mechanical warewashing equipment had a food residue and lime buildup observed inside and around door frame ledge area. Also the sanitizer line was laying in bottom of machine causing sanitizer to not dispense properly which was corrected. Various open pots and containers of food were stored under open seafood products in reach-in cooler at cook line.

Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in reach in refrigerator equipment. Pan on clean dish rack was observed to have food residue and was not clean to sight and touch. Corrected. Observed hood vents in the cook line area, with encrusted grease and soil accumulation. Observed clean food equipment and/or utensils in dish rack area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Cardboard lining shelves under prep table and lining freezer top under cutting boards to use as a prep table. Surfaces must be easy to clean and non porous. Corrected. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Handwash sink handles and wall area have food splash residue and floors under flour rack have a heavy build up of food residue. Also handles of bain marie and top of door has a food residue build up. The wall juncture in fryer area is not coved and closed to 1/32 inch. End strip missing on end of stainless wall with exposed pourous wood next to fryer.

Roselawn Bistro, 3650 Perkiomen Ave., Reading , Feb. 11: one violation. The interior of the ice machine, a food contact surface, was observed to have some residue and was not clean to sight and touch. Corrected.

Sliced tomatoes were held at 43.1 °F, and salami, 42.8°F, in the bain marie, rather than 41°F or below as required. Owner plans to convert to stainless steel pans vs plastic to aid in temperature conduction. Additionally, lettuce and tomatoes which freeze more readily, will be stored in alternate location for refreshing the bain marie supply.
