Bosky's Vegan Grill moving into old Mo' Beef location in downtown Springfield
After Amy Bennett struggled to find vegan options in Springfield during the pandemic she got the idea to open her own restaurant.
Bennett started a plant-based diet a few years ago, but has had a hard time finding restaurant options. Now, she is hoping to make things easier for others by opening Bosky's Vegan Grill in the old Mo' Beef location at 405 W. Walnut St.
Bennett is targeting May 9 as the opening day for the new restaurant.
"Downtown is a great spot to be, and I feel real lucky to have this place," Bennett said.
Bennett said Bosky's Vegan Grill will start off with a fairly small menu with salads and different plant-based offerings before expanding later.
"I am so grateful that I have made it this far in the process and we are so close to opening," Bennett said. "I'm thrilled and I can't wait to open the doors. It's going be fun."
