Bosque Brewing introduces The Drinkery on Santa Fe's south side

Jun. 19—Bosque Brewing Co. is opening a new concept this week on Santa Fe's south side, possibly a one-off.

The Drinkery by Bosque Brewing sits between Dion's and Jersey Mike's at 4980 Promenade Blvd., near Cerrillos Road and Las Soleras Drive.

In the works since 2019, The Drinkery will differ from Bosque Brewing's five "public houses" in Albuquerque and Las Cruces, the two Restoration Pizzas in Santa Fe and Albuquerque and its Bosque North Brewery and Taproom in Bernalillo.

"We are not going to have a kitchen," said Jess Griego, Bosque Brewing's chief operating officer and co-owner. "We will have a first-time partnership with Dion's. They will deliver the entire menu to our location. So far it's a one-off. We've been having a conversation with Dion's for four years."

Bosque Brewing first expanded into Santa Fe in summer 2021 with a beer bar at The Railyard but closed it in May 2022 and replaced it with its Restoration Pizza in December.

The Drinkery will offer beer and spirits, including vodka and gin made by Santa Fe-based As Above So Below, formerly Altar Spirits. Bosque Brewing introduced the As Above So Below vodka and gin at its public houses in May.
