'Brosia Bowl plant-based restaurant opening Friday in downtown Sioux Falls

‘Brosia Bowl is opening its new storefront this Friday.

The grand opening will be from 10 a.m. to 3 p.m. at the Jones421 building in downtown Sioux Falls.

“We’re not necessarily having a huge special event for the grand opening. Our focus is on the food,” owner Darcy Green said. “But I’m really excited to see people’s reaction and am looking forward to finally being open.”

'Brosia Bowl is a plant-based restaurant that features 100% biodegradable packaging.

Green has been selling her meals in Brookings and at Pomegranate in Sioux Falls for a few years now, but expanded her business this summer with a food truck.

One of the things Green is looking forward to is making first-time customers as well as seeing her regulars coming from the food truck.

To start, the menu will feature five salads and five grain bowls for lunch as well as a breakfast bowl or burrito option, which will be served all day.

'Brosia Bowl offerings will eventually include soups, hot sandwiches, pastas and stir fry.

“It’s going to be an organic evolution of the menu as we progress,” she said.

The grab-and-go section includes salads, hummus and fruit cups as well as dessert bars from Bee Loved Kitchen. Drinks include water, flavored water, tea and juice.

In the future, Green plans to incorporate a reusable container customers can bring back for a discount on their meal.

"We want our team to get familiar with the process and see how the community responds so we can evolve the menu to fit their needs," Green said.

While not like her original plan, Green said it will be nice and convenient for customers to choose their meal from the menu with the option of customizing their order, rather than made-to-order as you go through the line.

Green currently has two full-time staff members and one part-time staff member, but will eventually add another as they look to expand the hours and menu.

The 'Brosia Bowl food truck will continue to be at the Sioux Falls Farmers Market on Saturdays as well as the Levitt at the Falls on Aug. 18 and 19.

"I'm thrilled," Green said. "It's exciting. It's going to be a lot in the next couple of weeks, but we're ready to be open."

Normal hours are 10 a.m. to 3 p.m. Tuesday through Saturday.
