Business tidbits: New bakery opens, distillery makes absinthe, cancer fundraiser & events

Here’s your weekly roundup of the latest retail, business and restaurant activity in and around Whatcom County:

Bellingham distillery starts making absinthe

Chuckanut Bay Distillery, known for its housemade gin, vodka, bourbon, liqueur and more, has made its first absinthe, and celebrated the new product with a roaring 20’s themed party, according to a post on the distillery’s Facebook page.

The 114-proof Madame Richelieu Absinthe was released on Friday, Oct. 13, and can be purchased at the distillery. The name was “inspired by the historic Cafe Richelieu that occupied our building in the early 1900s,” according to the distillery’s website.

Visitors can also take distillery tours to see how the absinthe and other spirits are made. Chuckanut Bay Distillery’s tasting room is open from noon to 5 p.m. Monday and noon to 6 p.m. Tuesday through Sunday. The distillery’s restaurant, Penny Farthing, is open from noon to 9 p.m. Sunday and Tuesday through Thursday, and noon to 10 p.m. Friday and Saturday.

Cafe Rumba opens new bakery and bodega

Cafe Rumba, a Peruvian-style deli in Bellingham has opened a new bakery and space next door to the deli, serving “Peruvian sweets treats and other spicy flavors,” according to a post on the restaurant’s Facebook page.

The Café Rumba Dulceria & Bodega opened in September and serves a variety of pastries, cookies and espresso drinks.

Cafe Rumba is open from 8 a.m. to 8 p.m. Monday through Saturday, 9 a.m. to 8 p.m. on Sunday and is at 1140 N State St. in Bellingham.

Panera Bread hosting breast cancer awareness fundraiser

Panera Bread in Bellingham, along with its other Washington locations, is inviting customers to round up their purchases to support breast cancer awareness. The roundups will be donated to the American Cancer Society throughout October, according to a press release from the company.

Bellingham’s Panera Bread location is open from 6 a.m. to 9 p.m. Monday through Saturday, 7 a.m. to 9 p.m. Sunday and is at 1295 East Sunset Drive.
