National Hamburger Day is May 28, and what better way is there to celebrate than with a big, juicy burger from one of metro Phoenix's many great local burger joints?

Everyone knows — and either loves or hates — their standard fast food or neighborhood diner burger. But if you're looking to celebrate with a new and unique take on the classic meal, from Mexican-style hamburguesas topped with chorizo and roasted poblano, to vegan cheeseburgers, to a super luxurious $36 bone marrow and mushroom burger, these five newly opened restaurants deliver.

Then Burger

This speakeasy-style burger joint opened in Glendale in January 2023. The menu features a dozen unique burger options like the Maple Bourbon BBQ Bleu ($16), made with provolone, bleu cheese, maple bourbon barbecue sauce, house bacon and caramelized onion; and the Marrow and Mushroom ($36) made with muenster, shiitake mushrooms, bone marrow crisp and served with a marrow bone. Even more extensive than the burger lineup is the restaurant's drinks menu, which includes mules, cocktails, meads, drafts, bottles and canned beers.

Paradise Valley Burger Co.

Paradise Valley Burger Company has two locations in the Valley, the original in Phoenix and a brand-new restaurant in Tempe. Signature burgers include the Cinco Diablo ($11.25), made with a beef burger topped with a beer-battered poblano, Fresno chili pesto, serrano chili pickled in tequila, avocado, jalapeño ranch and chipotle bacon. The aptly named Booze Burger ($10.75) features a beer-battered patty smothered in green chili, bacon and vodka cream sauce and topped with chilies pickled in whiskey. For those looking for the most inventive burgers, PVBC is a standby.

Hamburguesas Y Cervezas

A new Mexican burger restaurant has opened on the ground floor of the Union @ Roosevelt apartment complex. Hamburguesa options include a Chorizo Burger ($16) made with chorizo, diced roasted poblano, sliced white onion, mustard, lettuce and pepper jack, and a Spicy BBQ Burger ($16) that comes topped with pepper jack, sliced roasted jalapeños, spicy onion strings and BBQ sauce. Other menu items include a spicy barbecue chicken torta and Roosevelt Row nachos topped with white corn tortilla chips, green chile queso, sliced radishes, sliced jalapeños, sweet white corn, pico de gallo, Mexican crema, mayocoba beans and queso cotija.

Night Owl Pizza and Drinks

Genuine Concepts owner Tucker Woodbury and chef Greg Ziegler of NYPD Pizza and Ziggy's Magic Pizza have opened Night Owl pizzeria and bar in Scottsdale. They serve a simple menu of pizzas and smash burgers along with 12 beers on tap and signature craft cocktails at the eclectic bar and restaurant, which is decorated with vintage skateboards and old pinball machines.

The burger menu is small, but mighty and includes mouthwatering options like the Screech Owl ($16), made with pepper jack cheese, lettuce, tomato, pickles, crispy jalapeños and special sauce.

Uniq Burger

It turns out that cutting out animal products from your diet does not mean no more yummy cheeseburgers. Uniq Burger in Scottsdale offers a great selection of vegan burgers and fries. The Southwest Burger ($12) is made with a plant-based patty, vegan cheese, lettuce, jalapeños, avocado, fried onion strings and house-made spicy aioli, served on a vegan brioche bun.
