This Chef Is Instagramming Critiques of His Own Restaurants

How’s this for constructive criticism? Frank Prisinzano—the chef and restaurateur behind popular NYC establishments Supper, Sauce, Frank, and Lil’ Frankie’s—is going to his own restaurants, ordering food, and publicly critiquing the meals for his more than 11,000 followers on Instagram.  

The “honest reviews” began last week, when Prisinzano posted a photo of a burger he ordered at his restaurant Supper, captioning it with the following: “From now on every time I visit one of my own places I will critique my experience for my staff and you.”

While the burger looked downright mouthwatering in the photo, and Prisinzano acknowledged it was cooked perfectly, there was still room for improvement.

“You see how it’s more meatball than burger?” he wrote. “This comes from not flattening the patty properly from the center out which causes the burger to bulge making it difficult to cook and eat. The arugula is being dressed too much and sloppily laid on the plate. The grilled polenta is being overpoured in the sheetpans and is way too thick. The bread for the crostini is not being grilled long enough and the grill itself isn't being wiped with an oiled cloth after its brushed clean making it more difficult to grill mark the meats.”

His reviews have continued since, and while the chef offers up plenty of praise where it’s deserved, he also makes it clear that the little things count just as much. From calling out missing croutons on his salad (“WTF,” he wrote) to strategizing the best way food should be separated in containers after receiving a less-than-perfect delivery, Prisinzano has impressed his followers by being candid with them.

“Loving the honesty from your reviews,” wrote Instagram user just_chri5. “Your ongoing quest to bring quality and comfort admist your success to ALL your dishes and restaurants is remarkably refreshing.”
