Chef Sam Hart offers first look at new restaurant Biblio in west Charlotte

Chef Sam Hart is putting the spotlight on wine with Biblio.

That reverse wine-pairing restaurant opens Dec. 14 at 2001 W. Morehead St. in west Charlotte. He’s invested $1.6 million into that restaurant and sister concept Counter-, also slated to open that day.

Hart says Biblio will be the first reverse wine-pairing restaurant in the world. Guests buy a bottle and then chef John Cruz creates plates to complement the vintage that guests select.

Biblio has selected high-end wines that tell a story, with women winemakers, people of color and members of the LGBTQ community represented. All are small-production wines. There will be 500 wines at Biblo, with over 2,000 bottles planned as part of the wine cellar for Biblio and Counter­-. Bill Cox is the wine director.

“It’s really to tell the stories that are often left on the shelf,” Hart says.
