Cooper's Hawk Winery & Restaurants gets approval to build location in Lansing Township

LANSING TWP. — An Illinois-based restaurant and winery chain known for its "modern casual restaurant, Napa-style tasting room and artisanal retail market" in each of its locations has approval to build near the Eastwood Towne Center.

According to township records, Cooper’s Hawk Winery & Restaurants wants to build its fourth Michigan restaurant — a nearly 10,000-square-foot building — at the corner of Wood Street and Lake Lansing Road.

Lansing Township's Board of Trustees approved the site plan for the proposed restaurant at 2101 Lake Lansing Road in September.

"From a township standpoint, they're fully approved," said township Planner Brad Beck, though there are some storm water drainage issues on the approximately 2 1/2 acre property that officials need to address.

Cooper’s Hawk Winery & Restaurants didn't respond to an email or message left regarding the proposed location.

Cooper’s Hawk Winery & Restaurants operates more than 60 locations in 11 states, including restaurants in Kentwood, Clinton Township and Troy, according to its website.

Construction likely to start in the spring

It's unclear how many people the restaurant will seat or how many workers the location will employ.

Township records indicate the site will include more than 170 parking spaces.

Beck said construction work on the property will likely start in the spring of 2024.

Chain offers 'contemporary American menu'

The chain was founded in 2005 and offers a "contemporary American menu," according to its website. An online menu includes steak and pork chops, pasta dishes, salmon and grouper, as well as chicken, burgers and sandwiches, and vegetarian dishes.

Each location includes a wine-tasting room and retail store that sells "decanters, wine accessories, a proprietary gourmet food line and a selection of curated seasonal gifts," the company website said. "All items are paired with a wine, labeled on the menu by bin number, as suggested by the winemaker."
