I've found something that's better than pancakes, and, no, it's not french toast. It's a wheel cake! They're basically stuffed pancakes that you can hold in your hand, no utensils or plates needed, and enjoy on the go. And Catmint Wheel Cakes makes some of the best.

Known as "Imagawayaki," wheel cakes are a dessert that has become a signature street food in Japan and Taiwan. But what makes them so cool is the way they're made. The "it's the journey, not the destination" saying really applies here. Every order is made fresh right in front of your eyes. Pancake-like batter is poured into a long, heated pan that cooks them low and slow. While the cakes are baking, they're topped with fillings that include custard, boba, chocolate, and bananas.

My favorite flavor was the Custard & Bubble, which happens to be one of their most popular options. It was sweet and fluffy with perfectly chewy boba. If you think that sounds good, you should check out their other flavors. They have a brick and mortar location but they also have pop-ups at tons of street fairs so keep an eye on their schedule.
