New craft brewery to open in Fairport's Cannery complex

Preservation Beer Company is poised to open this summer in the latest expansion of the Cannery complex within the village of Fairport.

Village Manager Bryan White said that the brewery will be located at the western end of a 42,775-square-foot structure at 75 N. Main St., which is currently being revamped from a warehouse to create offices, restaurants, indoor pickleball courts and other retail space by developer Donahue Management.

State officials announced last month that the Cannery revitalization project will receive $1 million through the Restore New York Communities Initiative. The funds are some of more than $112.9 million being given to 70 projects, including $5 million to transform a pair of landmark buildings in Rochester into mixed-use developments.

The beer company will be operated by the team behind Lock 32 Brewing Co. in Pittsford and Seven Story Brewing in Bushnell's Basin, a popular craft brewery that is closing at the end of June because the landlords did not renew the business' lease.

The trio - owners Casey Dunlavey and Seth Clark, and brewmaster Phill MacArthur - on their new website shared that Preservation Beer Company is "a brand new beer experience dedicated to the preservation of things that matter to us, and to the community where we live and brew."

The new brewery is slated to open later this summer, according to the brewery's website and a report by the Cleveland Prost local beer newsletter. Village officials said the space will be around 4,900 square feet and will also have a 1,500-square-foot outdoor patio.

In recent years, the former site of an old can factory has been transformed into office and retail space, including restaurants, and popular spots such as the Faircraft BrauhausCompane Trattoria and Iron Smoke Distillery.
