DeLand's Trilogy Kitchen: New breakfast and lunch spot operating in former Gram's Kitchen

DELAND — A flight of fresh biscuits, apple pie French toast and a Taco Bell-inspired crunch wrap are just a few of the flavorful offerings on the menu at Trilogy Kitchen.

And that's just breakfast.

If the name sounds familiar, it's because the new fast-casual breakfast and lunch spot was opened by the same married couple behind the beloved Trilogy Coffee Roasting Co.

"It's been a long time coming," Clay Cass said.

He said they began looking at expanding their business footprint a few years ago and put plans on hold during the coronavirus pandemic.

The restaurant is open from 7 a.m. to 2 p.m., Tuesday through Sunday and seats over 30 people; the outdoor area seats about the same.

Filling a need

Trilogy Kitchen opened just over a month ago at 844 E. New York Ave. between North McDonald and South Virginia avenues.

The location was previously home to Gram's Kitchen, which closed two years ago.

"We wanted to kind of do justice to the legacy that they created by offering a great breakfast and lunch menu, but we also wanted to give the space a refresh," Cass said.

The menu includes a breakfast entree named for the former longtime eatery: Gram's plate includes two eggs prepared any way, bacon, a buttermilk biscuit topped with thyme sausage gravy and home fries.

Michelle Cass said patrons of their downtown cafe on Georgia Avenue, which opened about seven years ago, have often asked for more food options.

"We saw the need for some great breakfast in DeLand," Michelle said, adding that they wanted to offer a menu of items "all made in-house and locally sourced as much as possible."

Clay said José Galan, Trilogy Kitchen's chef, has an "elevated Southern cuisine" approach to food.

During a recent visit to the new restaurant, customer Carol Lopez-Bethel had to share her thoughts with Clay.

"It's a game changer," Lopez-Bethel said of the carrot hummus panini, which includes roasted carrot hummus, red, yellow and green peppers, seasoned onions and feta on olive bread.

Lopez-Bethel also called the Cuban sandwich "as good as anything you get in Miami."

Visiting Trilogy Kitchen

Breakfast is served from 7-11 a.m. and ranges in price from $6-14.

Lunch is served from 11 a.m. to 2 p.m. and ranges in price from $6-10. Housemade chips are available as a side for $2.

Clay said patrons will find the drinks they know and love from the downtown cafe at Trilogy Kitchen.

Beverages range in price from $3-6.50 and include:

  • Drip coffee

  • Cold brew

  • Nitro brew

  • Espresso

  • Americano

  • Cortado

  • Cappuccino

  • Latte

  • Hot teas (flavors: black, jasmine citrus green, earl grey black, lemon ginseng with green tea, ginger turmeric herbal, chai)

  • Iced teas (flavors: black, jasmine citrus green, chai)

  • Matcha latte (hot or iced)

  • Hot chocolate (hot or iced)

  • Lemonade

  • Orange juice

Clay said mimosas will be on the menu once they obtain the required licensing.

The cats next door

In May, the DeLand Cat Cafe opened in a portion of what used to be Gram's Kitchen.

Visitors may order drinks from Trilogy Kitchen, available during the restaurant's operating hours, to enjoy while spending time with cats that are available for adoption from local shelters and rescues.

Deborah Cedar started the cat cafe in an effort to get more felines adopted.

A visit to the cat cafe is $10 per hour for an adult and $7 per hour for children.

The cat cafe is open Tuesday through Friday, from 10 a.m. to 4 p.m., and Saturday and Sunday, from 10 a.m. to 5 p.m.
