COPLEY — Customers who lamented the loss of Shisler's Cheese House will see another venue opening in the space within a couple months.

Three local businessmen have partnered to create Beau's Market & Deli, which is scheduled to open later this month or in early January.

"We are leaning toward January," said Beau Schmidt, a professional chef and longtime resident in the Copley-Fairlawn area. "We don't want to rush too much, especially with the amount of work and the upcoming holidays." Additionally, Schmidt said that "everything is on a slow ship or a dock somewhere," and there have been delays in getting supplies.

Schmidt's collaborators on the project are Rennick Andreoli, president of RDA Management and owner of the Hilton Akron Fairlawn (where another Schmidt namesake, Beau's Grille, operates), and Jeff Lynch, a longtime Copley resident and manager of the Sheraton Suites in Cuyahoga Falls.

Plan hatched to preserve site's 'country store' feeling

Schmidt said he and Lynch had been talking for some time about opening a wine bar and charcuterie when they heard about the pending closure of Shisler's, which closed in late October.

"About 10 days before, we started talking to them," Schmidt said about taking over the space. "We signed the lease before the end of October, and they were gone Oct. 31. We went in, ordered the equipment we needed and started remodeling."

Beau's Market & Deli will keep the "same country store type of feeling" of Shisler's but will offer more items and services.

"They had a great business," he said. "We don't want to change too much of what they were doing, we just want to improve it."

Sit-down meals, outdoor dining and grab-and-go options planned

Highlights, Schmidt said, will be a 40- to 50-seat restaurant area, a small bar, Boar's Head deli meats and cheeses, specialty cheeses and a variety of different wines. More wine tastings will be offered through the year, and a small plate menu will be offered in the evenings. Outdoor seating is planned for spring and summer.

"The Boar's Head meat and cheese is a key around the community," Schmidt said. "A lot of people were asking about it. That is going to be our main line of meats. There will be more grab-and-go options. There's a lot of trucking, a lot of auto places, where people will want to come in and grab a sub or salad and not have to wait for a deli person to make."

Customers also will have the option to order online, Schmidt added. The new market will include a retail section with olives, sauces, jellies and other items.

Some work is still needed before the new market opens its doors, Schmidt said.

"We just painted the whole inside," he said. "Now we are working on tables and chairs and some of the partition walls. We are in the process of building the bar. We are making all our own tables; we have a carpenter doing them."

Shisler's still maintains a store in Orrville.

The venue is at 1275 S. Cleveland Massillon Road in Copley.
