Owner Ray Sehweil shows some of the specialties at the Taste of Jerusalem on Pace Blvd. in Pensacola on Friday, July 20, 2018.

When Pensacola restauranteur Ray Sehweil named his near-to-heart restaurant Taste of Jerusalem — he did not only intend to bring craft meat kebabs, fresh chopped tabbouleh salad and homemade hummus, but replicate the atmosphere of a night in one of the world’s oldest cities.

His 7,650-square-foot restaurant on 2805 W. Cervantes Street was curated to be a gathering place for market-style grocery shopping, sit-down family meals and a place to step away and enjoy a puff of hookah amongst friends. A place illuminated by city streetlights and filled with chatter.

However, his latest concept id an “express version” of his signature restaurant, and the new location at 5039 Bayou Blvd. will be built around getting food in people’s hands, fast.

As in, 100 customers in under 20 minutes, fast.
