Jean Trimbach, sales and export director, will be the special guest. Advance reservations are required.

It’s Café Boulud’s second wine dinner in October, following an Oct. 13 affair highlighting German wines.

The restaurant typically offers one wine dinner a month, but synching with the schedules of expert guests calls for flexibility, Café Boulud General Manager Lucian Puscasu said.

Café Boulud’s head sommelier Imre Papp has selected Trimbach wines to pair with the four-course dinner conceived by executive chefs Dieter Samijn and Julie Franceschini.

A 6:30 p.m. reception with canapes and Trimbach Pinot Gris, Reserve 2016 will be followed by dinner at 7 p.m.

Torched lobster with ginger, lime and coconut is the first course, which will be paired with Trimbach Gewurztraminer, Cuvee des Seigneurs de Ribeaupierre 2012.

A second course of Belgian endive with French ham and Gruyere cheese will be served with Trimbach Pinot Noir Reserve 2018.

The third course of seared sea bass with celery and caviar will be paired with Trimbach Riesling, Cuvee Frederic Emille 2011.

Dessert is set to feature poached pear with pecan streusel and spice-cookie ice cream. It will be served with Trimbach Gewurztraminer, Vendanges Tardive 2014.

The cost is $195 a person, plus tax and gratuity.
