A new brand of caviar is on the Palm Beach scene.

Altima Caviar is served at Bice on Worth Avenue, and will be available for sale starting next week at Mary Mahoney, also on the Avenue.

“It’s delicious,” said Jose Gonzalez, general manager at Bice, where the caviar is offered for $135 an ounce and served with chopped egg, chopped red onion, sour cream and blinis, he said.

The Altima Caviar label was launched earlier this fall by Maribel Alvarez, a former Palm Beach resident whose West Palm Beach-based public-relations firm has long represented island clients.

Two premium grades of Russian oscietra farmed in the Galilee region of Israel are offered under the Altima brand.

Alvarez dove into the caviar business after a decades-long enthusiasm for the delicacy, which is the salt-cured roe of sturgeon fish, she said. She has visited sturgeon farms and said she drew on her experience of having done public relations for such caviar brands as Bemka, Marky’s and Black River.

Alvarez partnered with Graham Gaspard, former president of Black River Caviar, to vet what is superior caviar, she said.

“Graham is a real caviar expert and knows superb caviar,” said Stephen Gyland, owner of Cod & Capers in North Palm Beach.

Gyland said his seafood market and café offers one-ounce and 3.5-ounce tins of Altima Caviar for $80 and $260, respectively. “It’s of great quality,” he said.

Each teal-hued tin of Altima Caviar contains eggs from a single fish, which ensures clients will experience consistency, Alvarez noted.

“I’m thrilled to launch my new venture here,” she said.
