The Dish: Japanese dinner to be held at Café Boulud in Palm Beach

A Fort Lauderdale-based chef who specializes in Japanese cuisine will join the culinary team at Café Boulud on Thursday to help prepare a special multi-course “Voyage to Japan” dinner.

Guest chef Taek “Taka” Lee will prepare six of 12 small plates for the sake-paired dinner while Café Boulud executive chef Dieter Samijn will prepare the other six dishes.

Lee, a sushi and executive chef for 20-plus years, helms Oku by Takato at The Conrad Hotel in Fort Lauderdale.

“Voyage to Japan” will start with a 6:45 p.m. reception, followed by dinner at 7 p.m. A guest sake sommelier, Carl Callewaert, will select pairings for the dinner.

Truffled Hokaido scallop will start the meal, followed by uni toast; Ika somen (thin Japanese noodles); and fried-rice arancini.

The meal will continue with tartelette of crab and lemongrass; miso sea bass; toro tartare; and turbot with seaweed and cabbage.

Kaizen soba noodle; BBQ Wagyu short rib; dragon-fruit sorbet with cherry-blossom tea; and Matcha tea madeleines are the final small dishes planned for the evening.
