What are you doing about these crazy egg prices in Florida? You have a few choices

Eggs once had their own TV commercial. “The incredible edible egg” went the catchy tune.

Time for a rewrite of that song?

Let’s try: “The incredibly expensive egg.”

South Florida, along with the rest of the country, is feeling those words.

Walk into Publix and you may spot a carton of eggs for as much as 7 or 8 bucks. According to The Associated Press, the national average retail price of a dozen eggs hit $4.25 in December, up from $1.79 a year earlier.

“Current egg prices reflect many factors, most of which are outside the control of an egg farmer,” said Emily Metz, president and CEO of the American Egg Board trade group.

Why the price surge?

Millions of chickens have been slaughtered because of bird flu, so supply is down and prices are up.

The doubling in price has led to a U.S. senator calling for a price-gouging investigation by the Federal Trade Commission.

However that goes, all we know is that eggs are expensive. So what are you doing about it?

Are you giving up your favorite frittata? Using egg replacer in your cakes? Having one over-easy instead of two?
