A new Columbus ghost kitchen is offering build-your-own tacos for pickup and delivery.

Take Me Tacos is owned by Shannon Bowman, who also owns the catering company Bentos, which she launched in 2015.

Bowman, who grew up in Kansas and later Middletown, Ohio, before moving to Columbus, said her interest and joy for food came about as she cooked around the dietary needs of two of her sons, who are on the autism spectrum.

"We did a lot of food experimentation throughout their lives just trying to help ease some of the symptoms of autism," she said. "So I got into how food really does make a difference in your body. And so I get up every day wanting to cook."

Bentos was primarily focused on corporate catering. But Bowman said she turned to the Take Me Tacos concept after noticing the public's ordering habits were changing, adding she "didn't want to be left behind."

The delivery and pick-up only concept will operate out of Bentos' commercial kitchen at 1520 N. Cassady Ave. on the East Side.

Take Me Tacos offers made from scratch individual, family and party packs, which include a base of tortillas, rice, Fritos or lettuce; chicken, tofu, beef or pulled pork for protein; and sides, from tomatoes and jalapenos to pickled cabbage, elote corn dip, chimichurri rice, Borracho beans, guacamole and cheese. Caliente sauce and chili lime sauce also come with every order.

The ingredients are packed un-assembled to avoid soggy tacos and maintain freshness.

Also on the menu are a couple of cakes, including tequila sunrise, rum tres leches, chocolate Kahlua and lemon vodka cake.

No food at Take Me Tacos goes to waste, thanks to a partnership with Rescuing Leftover Cuisine, a New York City-based nonprofit that redistributes leftover food to feed people experiencing food insecurity. Last year Bentos donated 20,000 pounds of food to community members in need.

Bowman said she could see Take Me Tacos off-shooting to different locations and kinds of cuisines. For now, there are no plans for a brick-and-mortar, but if the concept takes off it could be a possibility.

“I hope people appreciate that it’s fresh. That it’s made from scratch. That we take care of our employees. That we take care of our community. And that we care about the experience every single person has,” Bowman said.

Take Me Tacos can be ordered online and on third-party delivery apps from 11 a.m. to 7 p.m. Mondays through Fridays and 4 p.m. to 7 p.m. Saturdays and Sundays.
