Edgin: Fireworks, pancakes top Lubbock business news; sneak peek into next week

June is officially winding down, and July is soon to kick off with a sky full of fireworks in celebration of Independence Day. I'll also be celebrating my 1-month anniversary with the A-J.

So far, Lubbock has shown itself to be a busy city full of options and interesting points of history. This week's sweetest business news included the Pancake House earning the Fancake Award from Nutella.

The award has an added collaboration bonus of a special local pancake, with input from Pancake House and Nutella. Lionel Orosco, Pancake House cook, mentioned that they don't have a recipe yet, but it will be different.

"My daughter loves Nutella, she'll say Nutella this, Nutella that," Orosco said. "I don't know if we'll add it on top, or mix it in, but we're known for our pancakes. They are made completely from scratch, that's what makes us different."

Fireworks are also officially on sale, prompting multiple stories on where to buy, safety, events and a new way to report violations this holiday.
