Eggs Up Grill expands to Lake Norman with opening of breakfast, brunch and lunch spot

On Lake Norman in Cornelius on Friday, Chris and Sofia Mendoza opened the fourth Charlotte-area location of Eggs Up Grill with business partner Alfonso Segura.

The breakfast, brunch and lunch spot opened at 6 a.m. Friday at 19732 One Norman Blvd. in Turnberry Place off Interstate 77 Exit 28.

Breakfast includes various classics; signature omelets; from-the-griddle pancakes, waffles and French toast; the Carne Asada burrito; Egg Bomb BLT and other selections.

Brunch has items such as shrimp and grits, the Founder’s Hash Benedict, eggs Benedict, the Coastal Crab Cake Benedict and the Southern Bowl, which includes creamy grits and home fries topped with sausage crumbles, sausage gravy and two eggs.

Lunch includes burgers, melts and other sandwiches, along with salads.

The restaurant seats 94 indoors and 32 on an outdoor patio. It will be open 6 a.m.-2 p.m. daily, with online ordering, takeout and delivery also available.

Chris Mendoza began his restaurant career with Yum Brands, spending 14 years with Taco Bell.

Founded 25 years ago in Pawleys Island, South Carolina, Eggs Up Grill has 66 locations open in the South, including Gastonia, Fort Mill and Rock Hill. The chain has 170 total locations open, under development or committed to open by local franchise partners, according to EggsUpGrill.com.
