FALL RIVER — A new diner has touched down in the Spindle City, serving up breakfast and lunch — with a twist.

Fall River native Lexis McGlynn is showcasing her passion for food at Twisted Griddle, where she's putting her own unique spin on classic diner fare.

"I want to give people that comfort of being at a diner with the comfort foods that you'd get there, just updated," said 27-year-old McGlynn. "Giving it that extra twist that it needs."

"Crazy" waffles, souped-up grilled cheeses, and funky and flavorful blueberry cheesecake french toast are just some teasers of the creative cuisine you'll find on the menu at Twisted Griddle, which opened its doors Wednesday, Sept. 20, at 757 Robeson St., at the site of the former Highland Luncheonette.

"I'm taking our classics, our basics — pancakes and all that — and I'm making it fun," she said.

Twisted Griddle a dream realized for city native

Twisted Griddle marks a new chapter for McGlynn, who most recently worked as a paraprofessional at Fall River's Resiliency Preparatory Academy, but has a lot of experience in the food service industry — from waitressing to bartending to managing restaurants as well as baking on the side for various family events.

According to McGlynn, owning a diner has been a longtime dream realized.

"I'm jumping for all the plans I've had ever since I was a little kid of owning a diner, getting to try out new foods," she said. "I've always loved to cook and bake so it's mixing the two worlds all together."

Growing up in the area, McGlynn said she was very familiar with the former Highland Luncheonette, and for years has recognized the potential cooking for something even greater at the highly trafficked Robeson Street spot.

"I've always known about the restaurant, and it's something I wanted to take over and really give it some love and really blossom it," McGlynn said.

So when the Highland Luncheonette property went on the market, McGlynn jumped on it, and by July 1 got the keys to her very own eatery.

From then on, McGlynn said it was a whirlwind (pun intended) getting Twisted Griddle ready for its debut — from cleaning to painting to installing a new counter to crafting the menu. The building accommodates about 51 diners, with seven booths, tables and a countertop.

McGlynn even enlisted a local artist to add some extra flair with diner-themed artwork spray painted on the walls.

A unique spin on classic comfort fare

Twisted Griddle certainly lives up to its name. When it comes to the menu, there's nothing basic about it.

Breakfast highlights will include crazy waffles, such as sweet potato waffle with cinnamon butter, "fun" french toast, such as peanut butter and jelly or blueberry cheesecake, and what McGlynn has dubbed "Twisted Sweetcakes" — pancake plates of various flavors such as peaches and cream, banana pudding, smores and strawberry shortcake.

"I'm doing things I haven't seen done a lot around here," said McGlynn, a self-proclaimed breakfast girl, referring to items such as Twisted Griddle's breakfast egg roll. "Just trying to play around and have fun with the menu."

Twisted Griddle is also mixing things up for lunch, serving up plenty of out-of-the-box mid-day options.

The menu features palate-pleasing picks like chicken and waffle plate, jalapeno popper grilled cheese with a tomato bisque, buffalo chicken egg rolls and linguica corn dogs. Or try their smashburgers, loaded fries and chicken wings, followed up with a milkshake.

So when can we get a taste?

McGlynn held a soft opening for family and friends, and officially opened Twisted Griddle to the public on Wednesday, Sept. 20.

"I hope people are just as excited as I am to get this new adventure started," McGlynn said.

Twisted Griddle is open Monday, Wednesday and Thursday, from 7 a.m. to 2 p.m., Friday from 7 a.m. to 7 p.m., Saturday and Sunday from 7 a.m. to 2 p.m.
