Having a kitchen scale for baking is sort of nonnegotiable. Sure, you can get by for a certain amount of time sticking to the good ol' volumetric measurements, but you'll come to realize that a majority of baking recipes go by weight—and getting in the practice of using a scale will make you a more accurate (and therefore better) baker. It may sound super technical, but once you start using a scale you’ll start to wonder how you went without one for so long. Scales make things easy and exact, which is why expert bakers use them for consistent, reliable, and most importantly, delicious results.
