Filomena's offers up a tasty burrata and summer tomato salad

Jun. 30—There you were, tiptoeing through June and its delicious weather, giggling to yourself about how those poor people in the Pacific Northwest were being parboiled in Satan's Own Heatwave — and then ... BAM!

Our turn.

We're not in triple digits (yet), but the heat and humidity have arrived like being a CIA team well-practiced in the art of waterboarding folks with steamed cotton balls. Any and all relief is gratefully accepted!

Fortunately, the excellent culinary team at Filomena's in Waterford shares a delicious, refreshing and easy-to-make dish that accentuates all the finest possibilities of the season in cooling fashion. Typically, Filomena's features this recipe at bridal and baby showers, rehearsal dinners, and special summer occasions. Behold the greatness!

Filomena's Burrata and Summer Tomato Salad

One ball of burrata*

One red tomato

One orange tomato

One yellow tomato

Directions: Place burrata in center of dish. Slice tomatoes and arrange around burrata. Slice through the middle of the burrata. Season with Himalayan pink salt. (If not available, regular salt is fine.) Drizzle with EVOO and balsamic glaze. Garnish with chopped basil.

*If, like some of us from Texas, your knowledge of cheese is limited to sliced American, Swiss and the Whiz kind that comes in a can and sprays onto your Rye Crisps, you might want to know that burrata is an Italian cow milk cheese made from mozzarella and cream.
