An internet search for lobster rolls will show warm lobster doused in butter and cold lobster smothered in mayonnaise. Got Fish? Seafood serves its lobster-tail breaded, fried and topped with a roasted-garlic-and-tomato aioli, and scallions.

Frying the lobster started on the Got Fish? food truck in 2017 when the business had only fryers, co-owner Ja’Nee’ Bartley said.

“We knew it was something slightly different from what people were used to and that our customers would really enjoy it,” she said in an email.

Bartley was right. The lobster roll is my favorite menu item. It’s available only on Fridays and Saturdays, so plan accordingly.

The house-made breadcrumb mixture and spice blend made the crustacean spectacular. It coated the tail with a crispy layer that wasn’t too thick or thin, and gave the succulent meat a seafood, seasoned-salt taste. The sandwich finished with a hint of sweetness from the Hawaiian split-top roll. The green onions provided a delicate amount of acid in every bite. I turned my roll upside down to dab at the onions in the container. They stuck to the creamy aioli for a good-to-the-last-drop moment.
