Food inspection notes contamination concerns at Springfield retirement community

Contamination was a concern during a Feb. 15 routine inspection at an independent living center in Springfield: An employee didn't wash their hands before donning new gloves, food was touched with a freshly sanitized spatula and multiple eggs were cracked in the same container to make multiple dishes.

In susceptible populations — people who are more likely to experience foodborne illness and are getting their food from a facility that provides care, like a school or nursing facility — the Missouri Food Code prohibits establishments from using raw eggs to make more than one serving of a food such as scrambled eggs or omelets without cleaning the container after each serving or using a fresh one.

The inspector also found an "accumulation of dead worms on lower shelving in old buffet area" at Creekside at Elfindale, 1601 S. Fort Ave. Education was provided for the violations, including the advice to clean "frequently enough to prevent the accumulation of pests."

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Arby's Roast Beef Restaurant No. 699, 1416 W. Kearney St., Springfield. Feb. 13 routine inspection – Result: active. No priority violations. Four non-priority violations: Observed ceiling vents left of prep tables found not clean; observed daylight visible along bottom of exterior back door in kitchen (repeat violation); observed cutting boards on prep tables need to be resurfaced or replaced; observed floor tiles missing under soft-serve machine and bottom of wall damaged in back kitchen on center wall near walk-in cooler.

Arby's Roast Beef Restaurant No. 7725, 1833 W. Republic Road, Springfield. Feb. 10 re-inspection – Result: active. No priority violations. One non-priority violation: Observed cutting boards on prep coolers are scored on both sides. Person in charge stated they were resurfaced; discussed that grooves need to be eliminated from surface. Required: Resurface or replace so surface is smooth and easily cleanable.

Aviary Creperie & Patisserie-Farmers Park, 2144 E. Republic Road, Springfield. Feb. 10 routine inspection – Result: permitted with re-inspection. Three priority violations: 1. Observed multiple food items in prep cooler and small refrigerator not being kept at or below 41 degrees Fahrenheit. Items voluntarily discarded. Refrigeration work order placed. 2. Observed bar dish machine sanitizer solution at 10 parts per million. Education given; solution should be at 50 to 100 ppm. 3. Observed several cutting boards and utensils not found in good repair. Items voluntarily discarded. Three non-priority violations: 1. Observed ice scoop and holder not found clean. Education given. 2. Observed fan in walk-in cooler and fan in kitchen were dirty. Education given. 3. Observed urinal in men's restroom not working. Education given.

Braum's Ice Cream No. 273, 1401 W. Sunshine St., Springfield. Feb. 14 re-inspection – Result: active. On site for re-inspection of cheese cooler and cooler logs. Boiled eggs tested at 39 degrees and cooler air tested at 36 degrees. No additional reinspection required. Will be back on site within three to four weeks for compliance check. No violations cited at time of inspection.

Bubba's BBQ, 504 N. West Bypass, Springfield. Feb. 15 re-inspection – Result: active. The following items still need to be worked on: 1. Some foods items that were on time as a control were not documented. Corrected prior to exit. These must be documented with time that they must be disposed of. 2. A few items in the hot hold cabinet were 130 degrees. These must be held at 135 degrees or above. 3. Floor in walk-in refrigerator and some areas of kitchen needed cleaned better. The other areas were much better. No violations cited at time of inspection.

Classy Llama, 2215 W. Chesterfield Blvd., Springfield. Feb. 13 routine inspection – Result: active. One priority violation: Observed no hot water available at either kitchen hand sink upon arrival. Maintenance was able to turn on hot water immediately, it had been shut off due to a pipe burst. Corrected on site. Education given. No non-priority violations.

Creekside at Elfindale, 1601 S. Fort Ave., Springfield. Feb. 15 routine inspection – Result: active. Two priority violations: 1. Observed employee handle personal phone without washing hands before donning new gloves. Required: Employees must wash hands after contamination occurs. Education provided and violation corrected on-site. 2. Observed employee state all eggs used are whole-shell eggs. When eggs were prepped, multiple whole-shell eggs were cracked in the same container and used to prepare multiple dishes, including scrambled eggs. Required: In susceptible populations, if more than 1 whole-shell egg is required for menu item, it shall be substituted with pasteurized liquid egg or containers shall be cleaned after each food item preparation. Two non-priority violations: 1. Observed employee wipe spatula with sanitizer cloth and immediately use spatula to chop scrambled eggs on stove top. Required: When cleaning surfaces with sanitizer, adequate time must be allowed for food contact surface to air dry to prevent contamination of food item. Education provided and corrected on-site. 2. Fast-N-Friendly, 1451 N. Kansas Expressway, Springfield. Feb. 9 re-inspection – Result: active. The walk-in refrigerator was holding 37 degrees at this time. Hot hold unit was holding chicken at 145 degrees. They still need to do a better job with date-marking refrigerated, ready-to-eat, foods. No violations cited at time of inspection.

Schultz & Dooley's, 2210 W. Chesterfield Blvd., Springfield. Feb. 13 routine inspection – Result: active. One priority violation: Observed queso in steam unit at 125 degrees. Required: Hot hold above 135 degrees. Queso was immediately re-heated on stove top to over 165 degrees. Corrected on-site. Three non-priority violations: 1. One priority violation: Observed several small clear containers are in poor repair, the food contact surface is rough and blistered from heat from hot food stored in containers.
