Food inspection report says Springfield nonprofit has mouse droppings in storage area

A nonprofit organization was found to have mouse droppings in its storage room, according to an April 27 food inspection report by the Springfield Greene County Health Department.

During a routine inspection, the Stalnaker unit of the Boys and Girls Club, 1410 N. Fremont Ave., was found to have mouse droppings in its storage room, according to the SGCHD report.

Also during that inspection, the report said an employee removed their gloves, switched to a different task and then put on a fresh pair of gloves without washing their hands, and mold was found on a bottle of mustard. Education was given on proper glove hygiene and the mustard was discarded, according to the report. The Stalnaker unit will need to be re-inspected.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department.

Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Two priority violations: Observed wiping cloth buckets were at 100 parts per million of quat solution, which was corrected on-site; observed lettuce and sliced tomatoes with discard date of May 3 and a temperature of 51 degrees to 52 degrees in make table, which was corrected on-site when manager voluntarily discarded both quarter pans. Observed one large container, about 4 inches deep, of cooked chicken was wrapped in plastic and put in walk-in refrigerator to cool. Inspector explained proper cooling methods and container was divided into two, left uncovered and placed back into walk-in refrigerator. 2. Observed front hand-sink blocked by cart with rice cooker on it. Promptly relocated rice cooker.

Panera Bread, 2535 N. Kansas Expressway, Springfield. April 27 re-inspection ‒ Result: permitted with re-inspection. Their warewashing service company had not been out and sanitizing solution was still in excess of 200 ppm chlorine. General manager called service company again and requested that they come out. Facility was instructed that they could run dishes through dish machine and then immerse in a sink compartment with proper concentration of sanitizer and air dry until machine was operating properly. Inspector asked to be contacted when operational and they would make a re-inspection. No violations cited.

Panera Bread, 2535 N. Kansas Expressway, Springfield. April 28 re-inspection ‒ Result: active. Dish service company had been out and final rinse was 150 ppm chlorine. No violations cited.

Pho Kim Restaurant, 3433 S. Campbell Ave., Springfield. May 3 routine inspection ‒ Result: active. No violations cited at time of inspection.

Pinas Locas LLC, 3211 S. Campbell Ave., Springfield. May 3 routine inspection ‒ Result: active. No priority violations. Two non-priority violations: 1.
