Food inspection reports: Half of Greene County establishments had no violations

Of the 45 routine food inspection reports from the Springfield Greene County Health Department over the past week, 23 reports listed no violations at all.

None of the schools inspected this week had any priority violations, according to the food inspection reports, though some did have non-priority violations.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department.

Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Amazin' Asian, 2941 E. Battlefield Road, Springfield. April 4 routine inspection – Result: active. One priority violation: Observed eggrolls at 65 degrees Fahrenheit and pot stickers at 49 degrees in two-door prep cooler. Observed bean sprouts at 44 degrees, cut cabbage at 42 degrees and raw beef at 45 degrees in three-door prep cooler. Owner stated that they shut off both coolers each day to cook the rice in the morning. They do not move foods when they shut off coolers. Discussed that coolers cannot be shut off at any time that potentially hazardous foods are in them. Foods had not been out of cooler or prepped at all today. Discussed not storing foods over fill line in prep cooler. Corrected by owner voluntarily discarding foods above 41F. Two non-priority violations: 1. Observed fried chicken at 49 degrees on counter next to fryer. Owner said they keep fried chicken out for two hours at room temperature and then put it back in cooler. Discussed that when dedicating potentially hazardous foods to time as a control, foods must be marked immediately after removal from temperature control for a discard time of no more than 4 hours. Once foods are dedicated to time as a control, they cannot be saved or reused for any reason. Foods must be sold or served within that 4 hours. Food had been out of cooler for approximately 30 minutes. Owner marked foods for discard time of 3 p.m. Corrected on site. 2. Observed vents on hood dripping with grease and nozzles/nozzle caps of fire suppression system were coated in grease. Last service date on sticker was October 2022. Owner said they have it scheduled for this week to be cleaned. Clean and maintain.

Ash Grove High School Harris Sports Complex Concessions, 100 N. Maple Lane, Ash Grove. March 31 routine inspection – Result: active. No priority violations. Two non-priority violations: Observed no thermometer in one refrigerator holding bratwurst; observed one PVC water line in back room had slight leak.

Ash Grove High School Cafeteria, 100 N. Maple Lane, Ash Grove. April 3 routine inspection – Result: active. No priority violations. One non-priority violation: Observed two cartons of frozen liquid eggs thawing in standing water in three-vat sink. Promptly moved to refrigerator.

Ash Grove High School Whitesell Stadium Concession Stand, 100 N. Maple Lane, Ash Grove. March 31 routine inspection – Result: active. No priority violations. Two non-priority violations: Observed no thermometer in back refrigerator holding hot dogs; observed two boxes of disposable cups sitting directly on floor.

Best of Luck Beer Hall, 313 S. Jefferson Ave., Springfield. March 31 routine inspection – Result: active. No priority violations. Two non-priority violations: 1. Observed significant build-up of grease on surfaces of prep coolers, floors and walls. Significant amount of dirt and debris in walk-in cooler. Correct by cleaning surfaces and maintaining clean. 2. Observed two-drawer prep cooler holding at 57 degrees. No potentially hazardous foods in cooler. Refrigeration repairman already on-site. Correct by having equipment fixed to maintain 41 degrees or below.

Freezer compressor repaired, no condensate build up observed on floor or under compressor. No priority violations. One non-priority violation: Observed no hot water in men's restroom. One priority violation: Observed dish machine at zero parts per million chlorine. Manager stated repair company had been out to repair. Manager agrees to wash, rinse and sanitize ware and utensils in three-vat sink until dish machine repaired. Discussed checking dish machine with test strips several times per day to make sure it is at 50 ppm chlorine as required. Repeat violation. Two non-priority violations: 1. Observed large amount of condensate in walk-in freezer under compressor, where buns were stored. Manager moved bun racks. Repair by next routine inspection. 2. Observed dish machine reaching 90 to 92 degrees on wash cycle. Required temperature is 120 degrees.

McDonald's 6061, 4101 S. Campbell Ave., Springfield. April 3 re-inspection – Result: permitted with re-inspection. Priority items corrected, dish machine is now at 100 ppm chlorine. Core item corrected: condensate is off the wall and an area under the compressor is blocked off so no food will be stored under unit, and maintenance is resealing walk-in freezer seams. No priority violations. One non-priority violation: Observed dish machine not reaching 120 degrees as required. Discussed with manager, found that all other faucets in building are at required temperatures. Manager agrees to contact plumber and discuss solutions.

Make sure ice is replenished as needed. The condenser tray in walk-in refrigerator is still dripping. Staff unable to find chlorine test strips, but will get some from one of their suppliers soon. The dish sprayer is still leaking and won't shut off completely. We also discussed that cardboard should be removed from shelving in walk-in refrigerator to provide better air flow.
