New food truck, Espinoza's Taco Truck, focused on giving 'street vibe' in Canton

Samuel Espinoza, a partner at Abelardo's Mexican Food, has expanded his restaurant ventures into a food truck located in Canton.

It's called Espinoza's Taco Truck, and they serve street tacos, burritos and tortas. It's a much simpler menu than the one at Abelardo's, Espinoza said. Samuel Espinoza and his uncle Ponciano run the food truck together.

"It is a simple menu as well because the food truck runs different than our restaurant," Espinoza said. "We figured the simpler the better."

The food truck is focused on giving off a "street vibe," Espinoza said. While the food truck is currently located in Canton, Espinoza said he's thinking about venturing out to Sioux Falls.

"There's a pretty good competition with food trucks here in Sioux Falls as of recently, so I guess it's a matter of finding a location, finding a good spot to put it," Espinoza said. "We do plan on expanding and opening more food trucks sometimes in the near future."

While Espinoza said he always had opening a food truck in his mind, it was spontaneous.

"Honestly, we didn't really have a food truck in mind until my uncle's contact mentioned that he had a food truck for sale, so it wasn't really anything in the works," Espinoza said.

While opening the food truck in Canton, Espinoza said he wasn't quite sure what to expect, but he's been impressed with the results already. The truck is open from 8 a.m. to 9 p.m. For breakfast, the Espinoza's Taco Truck serves breakfast burritos.

"We thought it was gonna start off a bit slow, just because (the) population isn't as big as Sioux Falls and everything being a new business, but I guess as soon as we got there, people started coming in," Espinoza said.
