Former accountant and her stepdaughters to open breakfast chain location in Hope Mills

After being devoted regulars at Eggs Up Grill in Shallotte, Stephanie Poole and her family are taking their love for the establishment to the next level by bringing the breakfast and brunch franchise to Hope Mills.

Franchise owner Poole, together with her stepdaughters Brittney Poole, 23, who will serve as the general manager, and Lauren Poole, 20, who will lead the kitchen, are slated to open Eggs Up Grill on Dec. 11 at 2951 Town Center Drive in the Traemoor Village Shopping Center.

The family recently relocated from Ocean Isle Beach to Hope Mills to open the restaurant.

“My family and I love breakfast,” Stephanie Poole said. “Any city that we’ve lived in, we always have a breakfast spot.”

Poole, who used to work in accounting, said that she fell in love with the chain’s welcoming down-home country vibe and comfort food.

“It’s not fast food, and it’s not upscale,” she said. “It’s the traditional American breakfast that most of us have grown up on.”

Open from 6 a.m. to 2 p.m. daily, the restaurant will serve dishes like pancakes, omelets, grits, home fries, muffins and biscuits and gravy alongside salads, sandwiches and burgers.

Those homestyle dishes will be served in the dining room, which seats 130, or can be ordered to go or for delivery through Doordash, Poole said. Catering will also be available.

Poole said she chose Hope Mills for the location because of its small-town feel and recent growth and development.

Thus far, residents have been receptive to the new chain restaurant, she said, and those who have dined at the chain in other cities are glad to hear there will soon be a location in the town.

Established in 1997 in Pawley’s Island, South Carolina, the franchise has 67 locations in the Carolinas, Georgia, Florida, Virginia, Tennessee and Alabama, and about another 100 stores planned.

Printed on the dining room walls of its many locations is the chain’s slogan, “let me make you smile.”

Poole said she and her staff of 30 will take that mission seriously.

“Our thing is, we want you and your family to come, let us serve you a hot meal and make you smile,” she said.
