(SOUNDBITE) (French) THREE-STAR CHEF OF "PLENITUDE - CHEVAL BLANC PARIS" RESTAURANT, ARNAUD DONCKELE, SAYING:
"When I arrived in Paris, I was really humbled, because there are only great chefs in Paris and all over France. Of course, I didn't think we would achieve this so quickly, I have to admit. I am so touched, thank you for your trust in me."
(SOUNDBITE) (French) THREE-STAR CHEF AT "LA VILLA MADIE" RESTAURANT, DIMITRI DROISNEAU, SAYING:
"We bought this place nine years ago, we had a one-month-old baby, and we had a second since. It's true, we live in La Villa Madie, we closed in on our territory, we tried to put this place in the spotlight, and we work in paradise, and it's so much easier to express ourselves when we work that way."
There are now a total of 31 three-star restaurants in France
