Back in the days when hams were much bigger than they are today, humorist Dorothy Parker wrote: "Eternity is a ham and two people," a line that was also mentioned in Irma Rombauer's famous "The Joy of Cooking."

As many of you are finding out, a turkey and two people can also coexist for an eternity.

You may find your seasonal visitor is still around come the end of the weekend. Turkeys, when returned to the frozen state in which they originally came, can even make an appearance in 2022. Welcome to the new year.

If the leftover turkey sandwich has lost its glamour, there is hope awaiting in some long-standing websites.

Typing in "leftover turkey recipes" in a search engine produces many choices. One among them is Insanely Good Recipes (www.insanelygoodrecipes.com), which offers recipes for leftover turkey casserole, turkey sandwiches, turkey tetrazzini and turkey shepherd's pie.

Speaking of that "all weekend" of turkey recipes, how long does turkey keep? Food experts recommend that if stored in the refrigerator, keep it three or four days. In a freezer, it will last three to four months. Don't forget to label it with the date it was frozen as well.

Cleaning out the 'fridge

Whether or not you have turkey leftovers in the refrigerator, there's a clever website that will help you cobble a meal with what's on hand and in the pantry: www.SuperCook.com.

"The only ingredients we assume you have are salt, pepper and water," it begins. Below that assumption are ingredients you want to use in the recipe. There are hundreds of items ranging from meats to herbs. They are listed by category from which to pick and choose, or they can be typed in.

And there are plenty of recipes waiting. Just adding eggs and milk produced 726 recipes. (Granted, there were a lot of "Instant Pot Hard Boiled Eggs" among them, but there were other variations as well. As an aside, the Instant Pot also comes in handy for using the turkey carcass and bones to make a stock.)

With six items on hand – carrot, cooked chicken, feta, garlic powder, salsa and tomato – the website turns up recipes for 168 dishes.
