Greene County food inspection finds MSU dining hall has trouble keeping food at right temp

Twelve establishments had trouble keeping food the right temperature this week, including a Missouri State University dining hall. In all, 74 routine inspections were performed this week.

During a Feb. 24 food inspection, the MSU Blair Shannon Dining Center was cited for two priority violations: Food items in a cooler not staying cold enough, and hot food items not staying hot enough. Until the cooler is repaired, the person in charge said they will no longer store potentially hazardous foods there. According to the report, a re-inspection will be made when the cooler has been repaired.

Food not kept at the correct temperatures can foster growth of bacteria that can make people sick, often without any obvious physical indicators like taste, smell or appearance, according to the United States Department of Agriculture.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

All violations were substantially corrected except for the floor tiles still in bad repair and a few containers of spices were sitting uncovered. Make sure to keep cleaning stove surface at end of each day, since a moderate amount of food debris accumulates fast. No violations noted at this time.

Sanitizer tested between 50 ppm and 100 ppm. Soap had been placed near both kitchen hand sinks. Hand sinks were empty. No meat was found thawing outside of the walk-in. Beans were found cooling using proper methods in shallow pans in ice baths.

Upon inspection cooler tested at 41 degrees. Hazard analysis and critical control point plan paperwork was provided for special processes and until approval special processes have been stopped. Walmart Supercenter No. 86 Deli, 2825 N. Kansas Expressway, Springfield. Feb. 24 routine inspection – Result: permitted with re-inspection. One priority violation: Observed multiple potentially hazardous foods not being held at or below 41 degrees. Items voluntarily discarded.

Walmart Supercenter No. 86 Deli, 2825 N. Kansas Expressway, Springfield. March 1 re-inspection – Result: active. The display cooler was running 37 degrees at this time. No violations cited.

Walmart Supercenter No. 86 Retail/Bakery, 2825 N. Kansas Expressway. March 1 routine inspection – Result: active. No priority violations. One non-priority violation: Observed pest control device attached to wall above a food preparation area.

Whole Hog Cafe, 224 W. Sunshine St., Springfield. March 2 routine inspection – Result: permitted with re-inspection. One priority violation: Observed three-door under-counter cooler air tested at 46 degrees. Slaw tested at 44 degrees, salad tested at 49 degrees and sour cream tested at 50 degrees. Person in charge voluntarily discarded six salads and five sour creams that tested above 41 degrees. Potato salad and slaw were placed in cooler 30 minutes prior, so were moved to walk-in cooler to reach 41 degrees. Re-inspection required. Two non-priority violations: Observed three-compartment sink in back separated room has leak in drainage plumbing; observed light shining in through back outside access door.

Willard High School, 515 E. Jackson St., Willard. Feb. 28 routine inspection – Result: active. No violations observed.
